Mint Brownie and Oreo Hot Fudge Trifle — Layering Something Worth Getting Exactly Right

I tried Gloria banana pudding recipe again this week, the one from her index card, but this time I made enough to bring the whole bowl to Sunday dinner. I have made it successfully twice before. This third time I knew what I was doing. The custard came together quickly, no lumps, glossy and thick exactly when it should be. I layered the Nilla Wafers and sliced bananas and custard in the right order, each layer careful. Put it in the refrigerator overnight.

Sunday I drove to Prattville with the bowl covered in plastic wrap and I put it on the kitchen counter and Gloria lifted the plastic wrap and looked at it without speaking for a moment. Then she said that is exactly right. Not almost right. Exactly right. I have been working toward that specific compliment for months. It landed exactly where I meant it to.

James tasted it and said this is better than mine. She said it is not better, it is the same. He said I think it is better. She gave him a look and he ate a second helping.

That evening, driving home, I thought about the index cards. About how Gloria made them for herself years before she knew I existed, just to keep her mother recipes organized. Mint Brownie and Oreo Hot Fudge Trifle

Ingredients

  • Brownie Layer:
  • 1 box (18 oz) fudge brownie mix, plus ingredients called for on box (typically 2 eggs, 1/2 cup oil, 1/4 cup water)
  • 1/2 teaspoon peppermint extract (added to brownie batter)
  • Mint Cream Layer:
  • 2 cups heavy whipping cream, cold
  • 8 oz cream cheese, softened
  • 1 1/2 cups powdered sugar, sifted
  • 1 teaspoon peppermint extract
  • 4–6 drops green food coloring (optional)
  • Oreo and Fudge Layer:
  • 24 Oreo cookies, roughly crushed (divided)
  • 1 1/2 cups hot fudge sauce, warmed (store-bought or homemade)
  • Topping:
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 6 Oreo cookies, halved, for garnish
  • 2 tablespoons mini chocolate chips

Instructions

  1. Bake the brownies. Preheat oven to 350°F. Prepare brownie batter according to package directions, stirring in 1/2 teaspoon peppermint extract. Pour into a greased 9x13-inch pan and bake 25–30 minutes, until a toothpick inserted in the center comes out with moist crumbs. Do not overbake. Cool completely, then cut into 1-inch cubes.
  2. Make the mint cream. Beat the softened cream cheese on medium speed until smooth, about 2 minutes. Add powdered sugar and peppermint extract and mix until fully combined. In a separate bowl, whip the cold heavy cream to stiff peaks. Fold the whipped cream into the cream cheese mixture in two additions until smooth and fluffy. Add food coloring if using and fold gently to combine.
  3. Warm the hot fudge. Heat hot fudge sauce in a small saucepan over low heat or in the microwave in 20-second intervals, stirring until pourable. Let cool slightly so it is warm but not hot.
  4. Build the first layer. Place half the brownie cubes in an even layer on the bottom of a large trifle dish or deep glass bowl (at least 4-quart capacity). Drizzle generously with half the warm hot fudge sauce. Scatter half the crushed Oreos over the fudge.
  5. Add the mint cream. Spoon or pipe half the mint cream layer over the Oreos, spreading gently to the edges of the dish.
  6. Repeat the layers. Layer the remaining brownie cubes, the remaining hot fudge, the remaining crushed Oreos, and then the remaining mint cream in the same order. Smooth the top of the mint cream layer evenly.
  7. Chill. Cover the trifle with plastic wrap and refrigerate for at least 2 hours, or overnight. Overnight gives the layers time to set and the flavors to meld together fully.
  8. Finish and serve. Before serving, whip 1 cup heavy cream with 2 tablespoons powdered sugar to stiff peaks. Dollop or pipe over the top of the trifle. Arrange the halved Oreos around the edge and scatter mini chocolate chips over the center. Serve chilled, scooping through all layers with a large spoon.
