- 1 English muffin, split
- 2 large eggs
- 2 tablespoons shredded cheddar or Colby-Jack cheese
- 1 tablespoon milk
- Salt and black pepper to taste
- Hot sauce or salsa, for serving (optional)
Instructions
- Toast the muffin. Place the split English muffin in a toaster and toast to your preferred level of golden. Set aside on a plate.
- Beat the eggs. Crack the eggs into a microwave-safe mug or small bowl. Add the milk, a pinch of salt, and a few cracks of black pepper. Beat well with a fork until fully combined.
- Microwave the eggs. Microwave on high for 45 seconds. Stir with a fork, pushing the cooked edges toward the center. Microwave for another 30–45 seconds until the eggs are just set but still slightly soft. They will finish cooking from residual heat.
- Add the cheese. Immediately sprinkle the shredded cheese over the hot eggs and let it melt for 30 seconds, or give the mug a quick 10-second microwave burst to help it along.
- Assemble and serve. Spoon or slide the cheesy egg onto the bottom half of the toasted English muffin. Add hot sauce or a spoonful of salsa if desired, top with the other muffin half, and serve right away.
