The week after the dinner. The family processed. Sofía called me Tuesday. She said, "Ma, I like James." I said, "Mija, good." She said, "Ma, he is shy in a good way." I said, "Mija, yes." Rosa called Wednesday. She said, "Ma, James was lovely. Carlos likes him." I said, "Mija, I am glad." Miguel Jr. called Thursday. He said, "Ma, James seems decent. We will see." Miguel Jr. is Miguel Jr. He is cautious. He does not let people in fast. He gave me his honest answer. I appreciated it.
James went to see Mami Wednesday. David drove him. They sat with Mami for an hour. Mami afterwards told me on the phone, "Carmen, James has good eyes." I said, "Mami, what does that mean?" She said, "Carmen, his eyes look at you when you talk. They do not look past you. They are not afraid of you. They are not too eager. They are good eyes." I said, "Mami, that is high praise." She said, "Carmen, I have known many bad eyes. I know good eyes." I said, "Mami, did you tell David?" She said, "Carmen, of course. I told David his eyes are good. David said, 'Mami, thank you.'" Mami slept twenty hours after the visit. She had given everything she had to that hour.
Tuesday food bank back: arroz con pollo, big batch. Yolanda strong. Marcus strong. Brian glad. Mr. Patterson back to his rhythm.
Wednesday I met with Tamika at City Hall to discuss the formal program kick-off. The contract had been signed. The plan was: Marcus and Yolanda would TA the fall 2025 cohort at Parkville. In spring 2026, Yolanda would lead the first satellite (Asylum Hill). In fall 2026, Marcus would lead the second (Frog Hollow). The third (North End) would launch when we had a third teacher. The press release would go out in October. Tamika asked if I would do an interview. I said no. I said the program could speak for itself. She said the press might come anyway. I said let them come — if they ask me, I will answer briefly and then I will keep cooking.
Friday I taste-tested the wake sofrito with Mami again. She said, "Carmen, perfect. Stop adjusting. This is the recipe." I wrote it down. I labeled the recipe in the notebook: WAKE SOFRITO — Mami approved August 8 2025. The recipe is now archived. I made twenty quart-bags and froze them on the dedicated shelf. Twelve dozen pasteles will need this much sofrito. I am ready. Mami is, in this one specific way, ready. Wepa.
The sofrito is archived. The pasteles sofrito is frozen, twenty quart-bags on the dedicated shelf, and Mami said stop adjusting — so I stopped. When a week ends that full — James’s good eyes, Miguel Jr.’s honest caution, the City Hall contract, the food bank back in its rhythm — I do not reach for anything complicated. I reach for something warm and spiced and old, something that asks almost nothing of me and gives almost everything back. This Mexican hot chocolate is what I make when I have already done the work and I am simply, quietly, ready.
Mexican Hot Chocolate
Prep Time: 5 minutes | Cook Time: 10 minutes | Total Time: 15 minutes | Servings: 4
Ingredients
- 4 cups whole milk
- 3 oz dark chocolate (70% cacao), roughly chopped
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons sugar, or to taste
- 1 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (adjust to heat preference)
- 1/4 teaspoon pure vanilla extract
- Pinch of fine sea salt
- Whipped cream or a cinnamon stick, for serving (optional)
Instructions
- Warm the milk. Pour the milk into a medium saucepan over medium-low heat. Warm until it just begins to steam, about 4–5 minutes. Do not let it boil.
- Add the chocolate and cocoa. Add the chopped dark chocolate and cocoa powder to the warm milk. Whisk steadily until the chocolate is fully melted and the mixture is smooth, about 2 minutes.
- Season the cup. Add the sugar, cinnamon, cayenne, vanilla, and salt. Whisk to combine. Taste and adjust sugar or cayenne as needed.
- Finish and froth. Raise the heat slightly and continue whisking until the mixture is hot and beginning to foam at the edges, about 2 more minutes. Do not boil.
- Serve. Ladle into mugs. Top with whipped cream or a cinnamon stick if desired. Drink while it is still warm enough to mean something.
