Back in New Orleans. Spring semester. Anatomy year two. The body deepening from structure into function — not just where things are but what they do. The doing is the medicine. The structure was the map. The function is the journey.

Sweet potato pie has always been the tradition, but this year I wanted to bake something that felt as deep as anatomy year two feels — not just the structure of a dessert, but the function of it, the way something this rich actually does the work of celebration. This Malted Mousse Cake is that cake: built in layers, malt adding a nostalgia that hits the same way a hand-drawn white coat does, the whole thing saying you made it another year, keep going.
Malted Mousse Cake

Ingredients
- For the cake layers:
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 cup malted milk powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon fine salt
- 2 cups granulated sugar
- 1 cup buttermilk, room temperature
- 1 cup strong brewed coffee, cooled
- 1/2 cup vegetable oil
- 3 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- For the malted chocolate mousse:
- 8 oz semi-sweet chocolate, finely chopped
- 1/3 cup malted milk powder
- 2 cups heavy whipping cream, divided
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- For the chocolate ganache:
- 6 oz semi-sweet chocolate, finely chopped
- 3/4 cup heavy cream
- 1 tablespoon unsalted butter
- Malted milk balls, for garnish (optional)
Instructions
- Preheat — prepare pans. Heat oven to 350°F. Grease two 9-inch round cake pans and line the bottoms with parchment paper. Dust with cocoa powder, tapping out any excess.
- Mix dry ingredients. In a large bowl, whisk together flour, cocoa powder, malted milk powder, baking soda, baking powder, salt, and sugar until evenly combined.
- Mix wet ingredients. In a separate bowl or large measuring cup, whisk together buttermilk, cooled coffee, vegetable oil, eggs, and vanilla extract.
- Combine — fill pans. Pour the wet ingredients into the dry ingredients and whisk until the batter is smooth and no dry streaks remain. Divide evenly between the two prepared pans.
- Bake. Bake for 30–35 minutes, until a toothpick inserted in the center comes out with just a few moist crumbs. Cool in pans for 15 minutes, then turn out onto a wire rack and cool completely.
- Make the mousse. Melt chopped chocolate with 1/2 cup of the heavy cream in a heatproof bowl set over a pot of barely simmering water, stirring until smooth. Whisk in malted milk powder. Let cool to room temperature. In a separate bowl, beat remaining 1 1/2 cups heavy cream with powdered sugar and vanilla to stiff peaks. Gently fold the whipped cream into the cooled chocolate mixture in three additions until fully incorporated. Refrigerate 30 minutes to firm slightly.
- Make the ganache. Heat cream in a small saucepan until just simmering. Pour over chopped chocolate and butter in a heatproof bowl. Let sit 2 minutes, then stir until completely smooth and glossy. Cool until pourable but slightly thickened, about 15 minutes.
- Assemble. Place one cake layer on a serving plate or cake stand. Spread the malted mousse evenly over the top. Place the second layer on top and press gently. Pour the ganache over the top of the cake, letting it drip down the sides naturally. Garnish with malted milk balls if desired.
- Chill — serve. Refrigerate assembled cake for at least 1 hour before slicing to allow the mousse to set. Slice with a warm knife and serve at cool room temperature.
