Low-Carb Cheesy Cheeseburgers

Ingredients
- 1 1/2 lbs 80/20 ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 4 slices sharp cheddar cheese
- 4 large iceberg or butter lettuce leaves (for wrapping)
- 4 slices tomato
- 4 slices red onion
- 1/4 cup dill pickle slices
- 2 tablespoons yellow mustard
- 2 tablespoons mayonnaise
Instructions
- Preheat the grill. Heat an outdoor grill or grill pan to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.
- Form the patties. In a large bowl, combine ground beef, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined — do not overwork the meat. Divide into 4 equal portions and shape into 3/4-inch-thick patties. Press a small indent into the center of each to prevent puffing.
- Grill the burgers. Place patties on the hot grill and cook for 4–5 minutes per side for medium doneness (internal temperature of 160°F). Do not press down on the patties while cooking.
- Add the cheese. In the last minute of cooking, place one slice of cheddar on each patty. Close the grill lid and let the cheese melt for 45–60 seconds.
- Rest the patties. Transfer burgers to a plate and let rest for 2–3 minutes so the juices redistribute.
- Assemble the burgers. Lay a large lettuce leaf flat as the “bun.” Spread mayonnaise and mustard on the leaf, then layer on the cheesy patty, tomato, red onion, and pickles. Wrap the lettuce around the burger and secure with a toothpick if needed.
- Serve immediately. Plate and serve right away while the cheese is still warm and melted.
