Ingredients
- 4 pounds red potatoes, cubed
- 1 teaspoon salt, plus more for boiling
- 6 hard-boiled eggs, peeled and chopped
- 1 1/2 cups mayonnaise
- 1/2 cup sour cream
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon celery seed
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 stalks celery, diced
- 1/2 cup red onion, finely diced
- 1/4 cup sweet pickle relish
- 2 tablespoons fresh dill, chopped (optional)
- Paprika, for garnish
Instructions
- Boil the potatoes. Place cubed potatoes in a large pot and cover with cold salted water. Bring to a boil over high heat, then reduce to medium and cook 15–18 minutes until fork-tender. Drain and spread on a baking sheet to cool completely.
- Make the dressing. In a large bowl, whisk together mayonnaise, sour cream, mustard, apple cider vinegar, celery seed, salt, pepper, and garlic powder until smooth and well combined.
- Combine the salad. Add the cooled potatoes, chopped eggs, celery, red onion, and sweet pickle relish to the bowl with the dressing. Fold gently until everything is evenly coated, taking care not to break up the potatoes too much.
- Add fresh herbs. Fold in fresh dill if using. Taste and adjust seasoning with additional salt, pepper, or vinegar as needed.
- Chill before serving. Cover the bowl and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld. The salad will taste even better the next day.
