- 1 cup (2 sticks) unsalted butter, softened

- 1 tbsp key lime zest (from about 8–10 key limes)
- 1/4 cup fresh key lime juice
- 1 cup sour cream
- For the glaze:
- 1 cup powdered sugar, sifted
- 2 tbsp fresh key lime juice
- 1 tsp key lime zest
Instructions
- Preheat and prepare. Preheat your oven to 325°F (163°C). Grease and flour a 10-inch Bundt pan thoroughly, making sure to coat all ridges.
- Mix dry ingredients. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- Cream butter and sugar. In a large bowl, beat the softened butter and granulated sugar together with an electric mixer on medium-high speed for 4–5 minutes, until light and very fluffy.
- Add eggs and flavoring. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, key lime zest, and key lime juice until combined.
- Alternate flour and sour cream. With the mixer on low, add the flour mixture in three additions alternating with the sour cream in two additions, beginning and ending with flour. Mix just until no dry streaks remain — do not overmix.
- Bake. Pour the batter evenly into the prepared Bundt pan. Bake for 65–75 minutes, or until a wooden skewer inserted in the center comes out clean and the top is golden. Tent loosely with foil after 50 minutes if browning too quickly.
- Cool. Allow the cake to cool in the pan on a wire rack for 15 minutes, then invert onto the rack and cool completely, at least 1 hour.
- Make the glaze. Whisk together the powdered sugar, key lime juice, and zest until smooth. The glaze should be thick but pourable — add juice a few drops at a time to adjust consistency.
- Glaze and serve. Drizzle the glaze over the cooled cake, allowing it to run naturally down the sides. Let set for 10 minutes before slicing.
