- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1 1/2-inch pieces
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 2 large eggs
- 2 tbsp heavy cream
- Avocado oil or lard for frying (about 1/2 cup)
Instructions
- Mix the coating. In a shallow bowl, combine almond flour, Parmesan, garlic powder, onion powder, smoked paprika, cayenne, salt, and pepper. Stir until evenly blended.
- Prepare the egg wash. In a separate shallow bowl, whisk together the eggs and heavy cream until smooth.
- Dredge the chicken. Working in batches, dip each piece of chicken into the egg wash, letting the excess drip off, then press firmly into the almond flour coating on all sides.
- Heat the oil. Pour avocado oil into a large cast iron skillet to about 1/4-inch depth. Heat over medium-high until shimmering, about 325—350°F.
- Fry the nuggets. Add chicken pieces in a single layer without crowding. Fry for 5—6 minutes per side, turning once, until deep golden brown and cooked through (internal temperature 165°F).
- Drain and rest. Transfer to a wire rack set over a baking sheet. Let rest 2—3 minutes before serving so the crust sets and the juices redistribute.
- Serve. Serve hot with your favorite dipping sauce — ranch, honey mustard, or hot sauce all work beautifully.
