The kitchen is in full winter mode. The oven at 375 (always 375), the crockpot on the counter, the pantry stocked with jars from last August's canning — the evidence of a woman who preserves summer against winter and loss against forgetting and food against everything.
Thursday was tater tot hotdish, because Thursday is always tater tot hotdish and the schedule doesn't change for anything — not pandemics, not loss, not the passage of years. The tater tots go in at 375 and come out golden and the family eats them and the eating is the Thursday and the Thursday is the structure and the structure holds. But I also made Christmas fudge earlier this week, because the kitchen doesn't only look backward. The kitchen grows.
The cookie season has ended and the soup season has settled in. The kitchen smells like broth and thyme and the slow simmer of food that takes hours and rewards the hours with warmth. Winter cooking is patient cooking. The patience is Marlene's gift. The cooking is mine.
The Christmas fudge I made earlier this week reminded me that the kitchen doesn’t only hold tradition — it stretches toward something new when you let it. These Hot Fudge and Salted Caramel Blondies are that stretch: not quite a cookie, not quite a brownie, but something warm and layered and worth the patience. They sit right alongside the soup season and the Thursday rituals, something sweet to balance all the savory structure — because the kitchen grows, and growing means making room for both.
Hot Fudge and Salted Caramel Blondies
Prep Time: 15 min | Cook Time: 30 min | Total Time: 45 min | Servings: 16
Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- 1/3 cup hot fudge sauce, plus extra for drizzling
- 1/3 cup salted caramel sauce, plus extra for drizzling
- 1/2 teaspoon flaky sea salt, for finishing
Instructions
- Preheat and prepare. Heat oven to 350°F. Grease an 8x8-inch baking pan and line with parchment paper, leaving an overhang on two sides for easy lifting.
- Mix the wet ingredients. In a large bowl, whisk the melted butter and brown sugar together until smooth and glossy. Add the eggs one at a time, whisking well after each. Stir in the vanilla extract.
- Add the dry ingredients. Fold in the flour, baking powder, and fine sea salt until just combined — do not overmix.
- Layer the batter and sauces. Spread half the batter evenly into the prepared pan. Dollop the hot fudge sauce and caramel sauce over the batter in small spoonfuls, then gently swirl with a butter knife. Spread the remaining batter on top as evenly as you can.
- Top and bake. Drizzle a little additional hot fudge and caramel over the top. Bake for 28–32 minutes, until the center is just set and the edges are golden brown. A toothpick inserted near the center should come out with moist crumbs, not wet batter.
- Finish and cool. Remove from the oven and immediately sprinkle with flaky sea salt. Let cool completely in the pan on a wire rack before lifting out and cutting into 16 squares. The sauces will set as they cool.
