  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1 bay leaf
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon apple cider vinegar
  • Fresh parsley, chopped, for garnish

Instructions

  1. Reconstitute the dried mushrooms. Place dried mushrooms in a bowl and cover with 2 cups of warm vegetable broth. Let soak for 20–30 minutes until softened. Remove mushrooms and chop roughly; strain the soaking liquid through a fine-mesh sieve and reserve it—this is the flavor backbone of the soup.
  2. Sauté the aromatics. Heat olive oil in a large pot over medium heat. Add onion and cook for 5 minutes until translucent. Add garlic, carrots, and celery; cook another 4 minutes, stirring occasionally.
  3. Build the mushroom base. Add the fresh cremini mushrooms and the chopped rehydrated mushrooms to the pot. Cook for 6–8 minutes, stirring occasionally, until the fresh mushrooms have released their liquid and begun to brown.
  4. Add liquids and seasoning. Pour in the reserved mushroom soaking liquid and the remaining 2 cups of vegetable broth. Add thyme, bay leaf, smoked paprika, soy sauce, and apple cider vinegar. Stir to combine.
  5. Simmer. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 20 minutes to let the flavors meld and the broth deepen.
  6. Adjust and serve. Remove bay leaf. Taste and adjust salt and pepper as needed. Ladle into bowls and finish with fresh parsley.
