Summer is here. The official kind, the kind where everyone is outside and the city smells like sunscreen and someone's grill and the harbor on the hot days when the wind comes off the water. Liam is fifteen months and outdoor-obsessed in a way that requires constant negotiation about when we go inside. "Outside" is the word he says most. He goes to the door and says it. He says it in the morning. He says it at seven-thirty PM when we are trying to get him to bed. Outside is where things happen and inside is where you eat and sleep and wait.
Priya and I have been eating lunch on the hospital roof deck when the weather allows. There's a bench under a small overhang and a view of the Charles and on good days it's the best twenty minutes of the shift. She told me on Tuesday that her husband is being transferred to Seattle in the fall—a two-year post, then back—and asked if I thought she should go. I said yes without hesitating. She looked at me for a moment and said "that was fast." I said if you have to think that long about whether to say yes, you already know the answer. She said "I'm going to miss eating lunch with you." I said I'm going to miss it too. Both things true.
Strawberry galette on Sunday with the last really good strawberries of June. Buttery crust, not too sweet, the strawberries still tart. Liam ate more of it than is technically appropriate for a fifteen-month-old and I let him because it's strawberry season and it ends.
The galette came together on a Sunday when I was already thinking about endings — strawberry season, Priya’s last few months before Seattle, the tiny window where Liam is exactly this age and wants exactly this much. I’ve been reaching for recipes that feel like that: not fussy, not precious, just fruit and a little butter and enough sweetness to make it matter. These blueberry muffins are the weekday version of that same instinct — something you can bake before the berries turn, something that’s just good enough to hand to a toddler and mean it.
Healthier Blueberry Muffins
Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes | Servings: 12 muffins
Ingredients
- 1 cup whole wheat flour
- 3/4 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup plain low-fat Greek yogurt
- 2 large eggs
- 1/4 cup unsalted butter, melted and slightly cooled
- 1 teaspoon pure vanilla extract
- 1 1/2 cups fresh blueberries (or frozen, not thawed)
- 1 tablespoon turbinado sugar, for topping (optional)
Instructions
- Preheat. Heat oven to 375°F. Line a 12-cup muffin tin with paper liners or lightly grease with nonstick spray.
- Mix the dry ingredients. In a large bowl, whisk together the whole wheat flour, all-purpose flour, sugar, baking powder, baking soda, salt, and cinnamon until combined.
- Mix the wet ingredients. In a separate medium bowl, whisk the Greek yogurt, eggs, melted butter, and vanilla extract until smooth and uniform.
- Combine. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined — do not overmix. A few streaks of flour are fine. The batter will be thick.
- Fold in the blueberries. Add the blueberries and fold in carefully to avoid crushing them and turning the batter purple.
- Fill and top. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Sprinkle turbinado sugar over the tops if using.
- Bake. Bake for 18–22 minutes, until a toothpick inserted into the center comes out clean and the tops are lightly golden. Do not overbake.
- Cool. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack. Best eaten warm or the same day, but they keep well covered at room temperature for up to 2 days.
