Ham, Sweet Potato and White Bean Soup with Bacon (Slow Cooker)

Ingredients
- 6 slices thick-cut bacon, chopped
- 2 cups diced cooked ham (about 10 oz)
- 2 medium sweet potatoes, peeled and cut into 3/4-inch cubes
- 2 cans (15 oz each) Great Northern or cannellini beans, drained and rinsed
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 3 stalks celery, sliced
- 2 medium carrots, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 6 cups low-sodium chicken broth
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- Salt to taste
- Fresh flat-leaf parsley, chopped, for serving
Instructions
- Cook the bacon. In a skillet over medium heat, cook the chopped bacon until crispy, about 6–8 minutes. Transfer to a paper-towel-lined plate and set aside. Reserve 1 tablespoon of the drippings.
- Saute the aromatics. In the same skillet with the reserved drippings, cook the onion, celery, and carrots over medium heat for 4–5 minutes until softened. Add the garlic and cook 1 minute more. This step builds deep flavor but can be skipped if you’re short on time — just add everything raw to the slow cooker.
- Build the slow cooker base. Add the sauteed vegetables to the slow cooker along with the ham, sweet potatoes, beans, diced tomatoes, and chicken broth. Stir in the smoked paprika, thyme, black pepper, and cayenne if using.
- Cook low and slow. Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until the sweet potatoes are completely tender and the soup has thickened slightly.
