Gumbo in a Jiffy — The Day Zaria Marched on Her Own Two Feet

Martin Luther King Day. Aiden on my shoulders for the seventh year. Zaria walking beside me for the first time — no stroller, her own feet on the pavement. She marched for three blocks before requesting to be carried. I carried her. Dada carries. That is what Dada does.

When we got home, Aiden was asleep on my shoulder before I even got his coat off, and Zaria was already asking for something to eat — still buzzing, still proud of herself, as she should be. I needed something that felt as deep and warm as that day did, something with roots, something that said we did something today. Gumbo was the only answer. This quick version means I could have it on the table before the pride wore off.

Gumbo in a Jiffy

Ingredients

  • 1 lb andouille sausage, sliced into rounds
  • 1 lb medium shrimp, peeled and deveined
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (10.5 oz) condensed chicken broth
  • 1 cup frozen sliced okra
  • 1 cup frozen corn kernels
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon Cajun or Creole seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 2 cups water
  • 2 cups cooked white rice, for serving
  • Salt and black pepper to taste
  • Sliced green onions, for garnish

Instructions

  1. Brown the sausage. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the andouille sausage slices and cook for 3–4 minutes, stirring occasionally, until lightly browned. Remove sausage and set aside.
  2. Sauté the vegetables. In the same pot, add the onion, bell pepper, and celery. Cook over medium heat for 4–5 minutes until softened. Stir in the garlic and cook for 1 minute more.
  3. Build the base. Add the diced tomatoes (with liquid), chicken broth, and water. Stir in the Cajun seasoning, smoked paprika, and cayenne pepper. Bring to a boil.
  4. Simmer everything together. Return the sausage to the pot. Add the frozen okra and corn. Reduce heat to medium and simmer uncovered for 12–15 minutes, stirring occasionally, until the okra is tender and the flavors meld.
  5. Add the shrimp. Stir in the shrimp and cook for 3–4 minutes just until they turn pink and opaque. Do not overcook. Taste and adjust salt, pepper, and seasoning as needed.
  6. Serve. Ladle gumbo over cooked white rice in bowls. Garnish with sliced green onions. Serve hot.
