December. Christmas season. I am decorating with more energy than last year because last year Christmas was the first without Mama and everything was survival and this year Christmas is the second without Mama and everything is building. Building traditions. Building a life that honors hers and is also mine. The tree goes up. The lights go on. Marcus hangs the star (he's tall enough now to reach without a stool, which is a milestone I was not emotionally prepared for). Jasmine organizes the ornaments with the precision of a museum curator, as is her custom.
I am making gifts again for the Set the Table girls: jars of my spice blend, plus this year, a handwritten recipe card for each girl with the first recipe she learned at Set the Table. Destiny gets scrambled eggs and cornbread — the first class, the class where Mama sat on the stool. Diamond gets the same. Each card has a note on the back: "You made this. Don't forget it." Because that's what Mama said to Kendra when the grits were right, and it's what I'll say to every girl I teach until I stop teaching, which is never.
Jasmine's winter concert is next week. She has a solo again — "O Come, O Come, Emmanuel" — a song that is technically a hymn but in Jasmine's voice is an event. She rehearses at home with the dedication of a professional and the volume of a child who doesn't understand that the walls are thin. Marcus wears headphones. I listen from the hallway. The voice is bigger this year. Fuller. Eleven years old (her birthday is December 15th — she'll be eleven) and the voice is developing a richness that wasn't there at nine. She's growing into it the way you grow into a gift: gradually, then all at once.
Made gingerbread cookies with the kids. A new tradition — Mama didn't do gingerbread (she was a pecan pie and pound cake woman; cookies were someone else's department). These are mine. Ginger, cinnamon, molasses, the dough chilled and rolled and cut into shapes that range from recognizable (Jasmine's; she's precise) to abstract (Marcus's; he insists his are "conceptual"). We decorated them with icing and sprinkles and the kitchen was covered in flour and sugar and the sound of two kids arguing about whether a gingerbread man needs eyebrows (Jasmine: yes; Marcus: eyebrows are a social construct). It was perfect. The cookies were imperfect and perfect and mine.
Mama was a pecan pie woman, a pound cake woman — cookies were never her territory, which means they get to be mine. When Marcus and Jasmine and I stood in that flour-dusted kitchen arguing about whether gingerbread men need eyebrows (they do, for the record), I knew I needed a recipe that could carry the weight of a new tradition: bold spice, satisfying chew, and enough heft that each cookie feels like it means something. These Giant Spice Cookies are exactly that — big enough to hold all the warmth of a building season.
Giant Spice Cookies
Prep Time: 20 min | Cook Time: 14 min | Total Time: 34 min | Servings: 18 cookies
Ingredients
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 1 cup granulated sugar, plus extra for rolling
- 1 large egg
- 1/4 cup unsulfured molasses
- 1 teaspoon pure vanilla extract
Instructions
- Prep the oven. Preheat oven to 350°F. Line two large baking sheets with parchment paper and set aside.
- Mix dry ingredients. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt until evenly combined.
- Cream butter and sugar. In a large bowl, beat the softened butter and 1 cup of sugar together with a hand or stand mixer on medium speed until light and fluffy, about 2–3 minutes.
- Add wet ingredients. Beat in the egg, molasses, and vanilla extract until fully incorporated, scraping down the sides of the bowl as needed.
- Combine. Reduce mixer speed to low and gradually add the dry ingredient mixture, mixing just until a soft dough forms. Do not overmix.
- Shape the cookies. Scoop the dough into generous 2-tablespoon portions and roll each into a ball. Roll each ball in granulated sugar to coat, then place on the prepared baking sheets about 3 inches apart.
- Flatten slightly. Use the bottom of a glass or your palm to gently flatten each dough ball to about 3/4-inch thickness — these are meant to be big and substantial.
- Bake. Bake one sheet at a time for 12–14 minutes, until the edges are set and the tops show slight cracking. The centers will look just underdone — that’s perfect. They firm up as they cool.
- Cool. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Decorate with royal icing and sprinkles once fully cooled, if desired.
