Gelatin Fruit Salad

Ingredients
- 1 package (6 oz) strawberry gelatin
- 2 cups boiling water
- 1 cup cold water
- 1 cup seedless watermelon, cubed small
- 1 cup fresh strawberries, hulled and sliced
- 1 cup mandarin orange segments, drained
- 1 cup green grapes, halved
- 1/2 cup fresh blueberries
- 1/2 cup fresh mint leaves, for garnish
- Whipped cream or sour cream, optional for serving
Instructions
- Dissolve the gelatin. In a large mixing bowl, whisk the strawberry gelatin into 2 cups of boiling water until completely dissolved, about 2 minutes.
- Add cold water. Stir in 1 cup of cold water. Allow the mixture to cool to room temperature, about 15 minutes. Do not let it begin to set.
- Fold in the fruit. Gently fold in the watermelon, strawberries, mandarin oranges, grapes, and blueberries until evenly distributed throughout the liquid gelatin.
- Pour and chill. Pour the mixture into a lightly greased 9x13-inch dish or a decorative mold. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, until fully set.
- Serve. Slice or scoop into bowls. Garnish with fresh mint leaves and a dollop of whipped cream or sour cream if desired. Serve cold.
