Fudgy Brownie Balls

Ingredients
- 1 box (18.3 oz) fudge brownie mix, plus eggs, oil, and water called for on box
- 4 oz cream cheese, softened
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or vegetable shortening
- Flaky sea salt or sprinkles, for topping (optional)
Instructions
- Bake the brownies. Prepare brownie mix according to package directions in a 9x13-inch pan. Bake until a toothpick comes out with moist crumbs. Let cool completely, at least 1 hour.
- Crumble and combine. Break the cooled brownies into rough chunks and place in a large bowl. Add the softened cream cheese and mix with a fork or your hands until the mixture is uniform and holds together when pressed.
- Roll into balls. Scoop and roll the mixture into 1-inch balls (about 1 heaping tablespoon each). Place on a parchment-lined baking sheet. You should get about 24 balls.
- Chill. Place the baking sheet in the freezer for 30 minutes, until the balls are firm and cold.
- Melt the chocolate. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
- Dip and coat. Using a fork or dipping tool, lower each brownie ball into the melted chocolate, roll to coat completely, and lift out, letting excess drip off. Return to the parchment-lined baking sheet.
- Finish and set. Immediately top each ball with a pinch of flaky sea salt or sprinkles, if using. Let sit at room temperature for 20–30 minutes, or refrigerate for 10 minutes, until the chocolate shell is fully set.
