Ingredients
- 2 cups heavy whipping cream, divided
- 1 cup powdered sugar, divided
- 1 teaspoon vanilla extract
- 2 tablespoons instant espresso powder
- 2 tablespoons hot water
- 1/4 cup unsweetened cocoa powder
- 4 oz cream cheese, softened
- 1 cup sour cream
- 1 package (about 9 oz) chocolate wafer cookies, crushed
- 4 tablespoons unsalted butter, melted
- Chocolate shavings or cocoa powder, for garnish (optional)
Instructions
- Make the crust. In a bowl, combine the crushed chocolate wafer cookies with the melted butter and stir until the crumbs are evenly coated. Press firmly into the bottom of a 9x5-inch loaf pan lined with plastic wrap. Freeze for 15 minutes while you prepare the filling.
- Dissolve the espresso. Stir the instant espresso powder into the hot water until fully dissolved. Set aside to cool slightly.
- Make the base cream. In a large bowl, beat the softened cream cheese until smooth. Add the sour cream and 1/2 cup of the powdered sugar and beat until well combined and fluffy.
- Whip the cream. In a separate chilled bowl, whip the heavy cream with the remaining 1/2 cup powdered sugar and the vanilla extract until stiff peaks form.
- Fold together. Gently fold the whipped cream into the cream cheese mixture in two additions until just combined and no streaks remain.
- Create the mocha swirl. Divide the filling evenly into two bowls. Into one bowl, whisk in the dissolved espresso and the cocoa powder until fully incorporated and smooth.
- Layer and marble. Spoon alternating dollops of the vanilla filling and the mocha filling over the prepared crust. Use a butter knife or thin spatula to swirl them together gently with 3—4 long strokes, creating a marbled effect. Do not over-swirl.
- Freeze. Smooth the top, cover tightly with plastic wrap, and freeze for at least 6 hours or overnight until completely firm.
- Unmold and serve. Remove from the freezer 5—10 minutes before serving to soften slightly. Lift from the pan using the plastic wrap, invert onto a serving platter, and peel away the wrap. Dust with cocoa powder or top with chocolate shavings if desired. Slice with a sharp knife warmed under hot water.
