March 2024. The ISFA called. Phone interview: forty minutes about the farm, about Roger, about kitchen tables. In-person interview in Ames. Two hours. The mission on the wall: "Keeping families on the land." Five words. My whole life. They offered the job. I said yes before the sentence ended.
I left the insurance company. Twenty years. The last assessment was in Jasper County — same county where the Weber farm used to be. I delivered my last numbers and drove home and I didn't cry because I'm not a crier but I drove with something in my chest that wasn't grief for the first time in three years. Purpose.
I called Roger. "I got a job helping beginning farmers keep their land." The ten-second silence. Then: "Your mother would be proud." The biggest four words he's ever said.
Cinnamon rolls that night. Not Saturday. Wednesday. Celebration rolls. Extra frosting. More frosting. More fight. More keeping. The rolls rose. The frosting spread. The kitchen smelled like the future.
That Wednesday night I made cinnamon rolls, but the next morning I wanted something that would carry the feeling forward — something warm and layered and a little over-the-top, the way a real celebration deserves to be. This French Toast Casserole with Cream Cheese is exactly that: rich, sweet, and made to be shared, built the night before so the morning can just be the morning. It’s become my “something changed for the better” recipe, the one I come back to whenever life finally lines up with purpose.
French Toast Casserole with Cream Cheese
Prep Time: 20 minutes + overnight rest | Cook Time: 45 minutes | Total Time: 1 hour 5 minutes (plus overnight) | Servings: 10
Ingredients
- 1 loaf (about 1 lb) day-old French bread or brioche, cut into 1-inch cubes
- 8 oz cream cheese, softened and cut into small cubes
- 8 large eggs
- 2 cups whole milk
- 1/3 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup maple syrup, plus more for serving
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons unsalted butter, cut into small pieces
- Powdered sugar, for dusting
Instructions
- Prepare the baking dish. Grease a 9x13-inch baking dish with butter or nonstick spray. Spread half the bread cubes evenly across the bottom of the dish.
- Layer in the cream cheese. Scatter the cream cheese cubes evenly over the first layer of bread. Top with the remaining bread cubes, tucking the cream cheese in so it nestles between the layers.
- Make the custard. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, maple syrup, vanilla extract, cinnamon, and nutmeg until fully combined and smooth.
- Soak the casserole. Pour the custard mixture evenly over the bread and cream cheese layers, pressing down gently with a spatula to help the bread absorb the liquid. Dot the top with the small pieces of butter.
- Refrigerate overnight. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or overnight, so the custard fully soaks into the bread.
- Bake. When ready to bake, remove the casserole from the refrigerator 20 minutes before baking. Preheat your oven to 350°F. Bake uncovered for 40–45 minutes, until the top is golden brown, the edges are set, and the center is just firm.
- Rest and serve. Let the casserole rest for 5 minutes before serving. Dust with powdered sugar and drizzle with warm maple syrup.
