Fluffy Scrambled Eggs with Cheese — Bell Pepper Edition

- 8 large eggs
- 1/4 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced green bell pepper (about 1/2 medium pepper)
- 1/4 cup diced red bell pepper
- 3/4 cup shredded cheddar cheese, divided
- 1 tablespoon unsalted butter
- 1 tablespoon vegetable oil
Instructions
- Whisk the eggs. Crack all 8 eggs into a large bowl. Add the milk, salt, and black pepper. Whisk vigorously until the yolks and whites are fully combined and the mixture looks a little foamy — about 60 seconds. This is what makes them fluffy.
- Soften the peppers. Heat the butter and oil together in a large nonstick skillet over medium heat. Once the butter melts and starts to foam, add both bell peppers. Cook, stirring, for about 3 minutes until they soften slightly but still have a little snap.
- Add the eggs. Pour the egg mixture over the peppers. Let it sit untouched for about 20 seconds until the edges just begin to set.
- Fold slowly. Using a rubber spatula, gently push the eggs from the edges toward the center, folding in large, slow curls. Keep the heat at medium-low. Do not stir fast — patience here is what makes the eggs fluffy, not flat.
- Add the cheese. When the eggs are about halfway set and still look glossy and wet, scatter 1/2 cup of the cheddar over the top. Fold it in gently so it melts into the curds.
- Pull them early. Remove the skillet from the heat when the eggs still look just a little underdone. They will finish cooking from the residual heat in the pan. Overcooked eggs turn rubbery — trust the carry-over.
