Flavorful Grilled Pork Tenderloin

- 1 1/2 lbs pork tenderloin, silver skin removed
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, smashed
- 4 sprigs fresh thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions
- Season the meat. Pat the tenderloin completely dry with paper towels. Combine salt, pepper, smoked paprika, garlic powder, and onion powder. Rub the mixture evenly over the entire surface of the pork. Let it rest at room temperature for 10 minutes.
- Sear the exterior. Heat a cast iron skillet over medium-high heat until just beginning to smoke. Add olive oil and lay the tenderloin in the pan. Sear undisturbed for 3–4 minutes per side, rotating to build a deep crust on all sides, about 12 minutes total.
- Baste with butter. Reduce heat to medium-low. Add butter, smashed garlic, and thyme sprigs to the pan. As the butter foams, tilt the pan slightly and use a spoon to continuously baste the tenderloin with the herb butter for 2–3 minutes.
- Check for doneness. Remove the tenderloin when an instant-read thermometer inserted in the thickest part reads 140°F. The interior should be just barely pink—that’s right.
- Rest before slicing. Transfer the tenderloin to a cutting board and tent loosely with foil. Rest for 5 minutes. Slice into 3/4-inch medallions and plate with the pan drippings spooned over the top.
