Instructions
- Hard-boil the eggs. Place eggs in a single layer in a saucepan and cover with cold water by 1 inch. Bring to a full boil over medium-high heat, then remove from heat, cover, and let sit for 12 minutes.
- Cool and peel. Transfer eggs immediately to an ice bath and let cool for at least 5 minutes. Peel under cool running water and pat dry.
- Chop the eggs. Slice eggs in half lengthwise. If making deviled eggs, pop the yolks into a separate bowl. If making egg salad, chop whites and yolks together into rough 1/2-inch pieces — you want some texture, not a paste.
