- 1/2 cup unsalted butter, cut into pieces, plus more for greasing
- 1 cup powdered sugar, sifted
- 2 large whole eggs
- 2 large egg yolks
- 6 tablespoons all-purpose flour
- 1/4 teaspoon fine salt
- 1/2 cup granulated sugar (for caramel)
- 3 tablespoons heavy cream, warmed
- 1 tablespoon unsalted butter (for caramel)
- 1/2 teaspoon flaky sea salt, plus more for finishing
- Cocoa powder, for dusting ramekins
Instructions
- Prep the ramekins. Preheat oven to 425°F. Generously butter four 6-oz ramekins, then dust each with cocoa powder, tapping out the excess. Place on a baking sheet and set aside.
- Make the salted caramel. In a small saucepan over medium heat, cook the granulated sugar, swirling the pan occasionally, until it melts and turns deep amber, about 6–8 minutes. Remove from heat and carefully whisk in the warm heavy cream (it will bubble vigorously). Stir in 1 tablespoon butter and 1/2 teaspoon flaky sea salt until smooth. Set aside to cool slightly.
- Melt chocolate and butter. In a medium microwave-safe bowl, combine the chopped chocolate and 1/2 cup butter. Microwave in 30-second bursts, stirring between each, until fully melted and smooth, about 90 seconds total.
- Build the batter. Whisk the powdered sugar into the chocolate mixture until combined. Add the eggs and egg yolks and whisk vigorously until glossy and smooth. Fold in the flour and fine salt until just incorporated — do not overmix.
- Fill the ramekins. Spoon enough batter into each ramekin to fill it halfway. Drop 1 heaping teaspoon of salted caramel into the center of each. Divide the remaining batter evenly over the top, covering the caramel completely.
- Bake. Bake for 11–12 minutes, until the edges are set and pulling away slightly from the ramekin sides but the center still has a soft jiggle when gently shaken. Do not overbake — the molten center is the whole point.
- Rest and serve. Let the ramekins rest on the baking sheet for 1 minute. Run a thin knife around the edge of each, place a small dessert plate on top, and invert carefully. Lift the ramekin away. Finish with a pinch of flaky sea salt and serve immediately, with a small drizzle of any remaining caramel if desired.
