- 4 bone-in, skin-on chicken thighs (about 2 lbs)
- 2 lemons, one zested and juiced, one sliced into thin rounds
- 3 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary, crumbled
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon honey
- Fresh parsley, chopped, for serving
Instructions
- Preheat and prep. Preheat your oven to 400°F. Pat chicken thighs completely dry with paper towels — this is what helps the skin get golden and crisp.
- Make the herb marinade. In a small bowl, whisk together 2 tablespoons olive oil, lemon zest, lemon juice, minced garlic, thyme, rosemary, oregano, salt, pepper, and paprika until combined.
- Coat the chicken. Rub the herb mixture all over the chicken thighs, getting under the skin where you can. Let sit at room temperature for 10 minutes while you prep the lemons.
- Caramelize the lemon slices. Heat the remaining 1 tablespoon olive oil in an oven-safe skillet over medium-high heat. Add the lemon rounds in a single layer and drizzle with honey. Cook 2–3 minutes per side until golden and slightly caramelized. Remove to a plate and set aside.
- Sear the chicken. In the same skillet over medium-high heat, place the chicken thighs skin-side down. Sear without moving for 4–5 minutes until the skin is deep golden brown. Flip and sear the other side for 2 minutes.
- Roast. Arrange the caramelized lemon slices over and around the chicken. Transfer the skillet to the oven and roast for 25–28 minutes, until the internal temperature reaches 165°F and the juices run clear.
- Rest and serve. Let the chicken rest in the pan for 5 minutes before serving. Spoon the pan juices over the top, garnish with fresh parsley, and serve with the caramelized lemon rounds alongside. A note from Aaliyah: if you have lemon zest to spare, add it right before serving — it makes everything pop.
