My birthday is March 3rd. This year I turned twenty-two in a dorm room in DeKalb, Illinois, with a cake my mom shipped Priority Mail in a shoebox packed with bubble wrap. Easy Lemon Cake

Ingredients
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1 cup granulated sugar
- 2 tablespoons fresh lemon zest (from about 3 lemons)
- 3/4 cup unsalted butter, softened to room temperature
- 3 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1/4 cup fresh lemon juice
- 3/4 cup whole milk or buttermilk, at room temperature
Lemon Glaze
- 1 1/2 cups powdered sugar, sifted
- 3–4 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat oven. Preheat your oven to 350°F. Grease and flour a 9x13-inch baking pan, or two 9-inch round cake pans.
- Mix dry ingredients. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Zest into sugar. In a large bowl, combine the granulated sugar and lemon zest. Use your fingertips to rub the zest into the sugar until fragrant — this releases the oils and deepens the lemon flavor throughout the cake.
- Cream butter and sugar. Add the softened butter to the lemon sugar and beat with an electric mixer on medium-high speed for 3–4 minutes, until light and fluffy.
- Add eggs and vanilla. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and lemon juice.
- Alternate dry and wet. With the mixer on low, add the flour mixture in three additions, alternating with the milk in two additions, beginning and ending with flour. Mix just until combined — do not overmix.
- Bake. Pour batter into the prepared pan(s). Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean and the top is lightly golden.
- Cool. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before glazing.
- Make the glaze. Whisk together the powdered sugar, lemon juice, and lemon zest until smooth and pourable. Add lemon juice a tablespoon at a time to reach your desired consistency.
- Glaze and serve. Drizzle the lemon glaze over the cooled cake. Slice and serve. Eat at least two slices. You earned it.
