- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons granulated sugar
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted and slightly cooled
- 1 tablespoon vegetable oil or butter (for the pan)
Instructions
- Preheat the oven. Preheat your oven to 400°F. Place a 9-inch cast iron skillet or square baking pan in the oven while it heats so the pan gets hot — this gives the cornbread its golden, crispy bottom.
- Mix the dry ingredients. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar until evenly combined.
- Mix the wet ingredients. In a separate bowl or large measuring cup, whisk together the buttermilk, eggs, and melted butter until smooth.
