After March 8th. The week after is always the lighter week, the pressure released, the body coming back from its advance warning state. I slept better Wednesday night than I'd slept since February. The dreams come and go but the March-specific ones — the Sangin road, the dust, the sound — recede after the 8th as if they've done their annual work and can stand down.
The calving is starting. First calf of 2019 on Saturday morning — a heifer calf, small and alert, on her feet within fifteen minutes. I brought her and her mother into the calving pen for observation, which is the protocol for first-calf heifers, and by morning she was nursing well. Good start to the season.
I drove to Billings Thursday for my VA appointment. Dr. Stein asked how March 8th was. I told him about the river, two days early, and the conversation with Derek. He said, "You went early because you needed to, not because the date said to." I said that was right. He said, "That's progress. You're managing the anniversary rather than the anniversary managing you." I hadn't thought of it that way but he was right. I'm managing it. The ritual is mine now, not the grief's.
The blog readership has grown again. The essay from February is still getting shared — something about it resonated in a way the recipe posts don't, and people keep finding it. Someone from Vermont wrote to say they read it after their son came home from deployment and didn't know how to reach him, and the essay helped them understand what he might be doing in the garage at midnight. That one stayed with me. I write for the person at the fire. I didn't know I was also writing for the people who love that person.
First calf of the season on her feet in fifteen minutes — that’s the kind of morning that earns a real meal at the end of it. During calving season I want something I can put on before I go out and not have to think about until I come back cold and ready to sit down, and this dilled pot roast is exactly that. The dill was my grandmother’s addition to an otherwise plain braise, and there’s something about the smell of it coming through the house after a long check that makes the whole operation feel like it’s going to be okay.
Dilled Pot Roast

Ingredients
- 1 boneless beef chuck roast (3 to 3-1/2 lbs)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons canola oil
- 1 medium onion, sliced
- 3 garlic cloves, minced
- 1/2 cup beef broth
- 1 tablespoon red wine vinegar
- 1-1/2 teaspoons dried dill weed, divided
- 1 teaspoon dried oregano
- 3 tablespoons cornstarch
- 1/4 cup cold water
- 1 cup sour cream
Instructions
- Season and sear. Pat the chuck roast dry and season all over with salt and pepper. Heat canola oil in a large Dutch oven or heavy oven-safe pot over medium-high heat. Sear the roast 3–4 minutes per side until deeply browned. Transfer to a plate.
- Build the base. Reduce heat to medium. Add the sliced onion to the pot and cook, stirring occasionally, for 4–5 minutes until softened. Add the minced garlic and cook 1 minute more.
- Braise. Pour in the beef broth and red wine vinegar, scraping up any browned bits from the bottom. Stir in 1 teaspoon of the dill weed and the oregano. Return the roast to the pot, nestling it into the liquid. Cover tightly and cook in a 325°F oven for 3 to 3-1/2 hours, or until the meat is fork-tender and pulls apart easily.
- Make the gravy. Remove the roast to a cutting board and tent loosely with foil. Place the pot over medium heat on the stovetop. Whisk together the cornstarch and cold water until smooth, then stir into the pan drippings. Cook, stirring, until the gravy thickens, about 2–3 minutes. Remove from heat and stir in the sour cream and remaining 1/2 teaspoon dill weed. Taste and adjust seasoning.
- Serve. Slice or pull the pot roast and arrange on a platter. Spoon the dilled sour cream gravy over the top. Serve with egg noodles, mashed potatoes, or crusty bread to catch the sauce.
