She showed me the last page and I read it in the kitchen and I couldn't speak for five minutes because my twelve-year-old daughter wrote a novel about everything I've been trying to preserve, and she did it with a pen instead of a spoon, and the pen works too, and the preservation takes many forms, and the forms are all love.

Crispy Chicken Milanese

Ingredients
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups Italian-seasoned breadcrumbs
- 1/2 cup finely grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup olive oil, plus more as needed
- Lemon wedges, for serving
- Fresh parsley or arugula, for garnish (optional)
Instructions
- Pound the chicken. Place each chicken breast between two sheets of plastic wrap or in a zip-top bag. Using a meat mallet or rolling pin, pound to an even 1/2-inch thickness. This ensures quick, even cooking and a tender result.
- Set up the breading station. Arrange three shallow dishes in a row: flour in the first, beaten eggs in the second, and breadcrumbs combined with Parmesan, garlic powder, salt, and pepper in the third.
- Bread the cutlets. Working one at a time, dredge each chicken breast in flour, shaking off the excess. Dip into the beaten egg, letting the surplus drip off. Press firmly into the breadcrumb mixture, coating both sides evenly. Set breaded cutlets on a clean plate.
- Heat the pan. Pour the olive oil into a large heavy-bottomed skillet (cast iron or stainless work well) and heat over medium-high until the oil shimmers and a breadcrumb dropped in sizzles immediately.
- Pan-fry the cutlets. Add the chicken in a single layer — work in batches if needed to avoid crowding. Cook 4 to 5 minutes per side until deeply golden and cooked through to an internal temperature of 165°F. Add more oil between batches as needed.
- Drain and rest. Transfer cooked cutlets to a wire rack set over a baking sheet, or to a plate lined with paper towels. Let rest 2 to 3 minutes so the crust stays crisp.
- Serve. Plate each cutlet with a generous squeeze of fresh lemon juice, a scatter of parsley or a handful of arugula if desired, and extra lemon wedges on the side. Serve immediately.
