Crescent Zucchini Pie -- The Garden Keeps Giving, and So Do I

The kitchen is in full summer mode. The oven at 375 (always 375), the crockpot on the counter, the pantry stocked with jars from last August's canning — the evidence of a woman who preserves summer against winter and loss against forgetting and food against everything.

I made grilled chicken with garden vegetables this week — the summer version, the one that fills the kitchen with the smell that means this time of year, this stage of life, this specific Tuesday when the stove is warm and the family is fed and the feeding is the point. Kevin ate seconds. The man always eats seconds. The eating is the approval and the approval is the marriage.

Canning approaches. August. The ritual that marks the turn from growing to preserving, from garden to pantry, from the sun to the jar. The pressure canner — Marlene's mother's, weight jiggly, gauge lying, handle replaced twice — waiting in the closet like a veteran reporting for duty. The heirloom equipment for the heirloom work.

With the garden in full swing and the pantry filling back up jar by jar, I wanted something that used what was right outside my door — and right now, that means zucchini. This crescent zucchini pie has become one of those quiet staples of August in our kitchen: simple enough for a Tuesday, satisfying enough that Kevin always reaches for another slice. It’s the kind of recipe that fits the season the way a lid fits a mason jar — snug, purposeful, just right.

Crescent Zucchini Pie

Prep Time: 15 min | Cook Time: 25 min | Total Time: 40 min | Servings: 6

Ingredients

  • 1 tube (8 oz) refrigerated crescent roll dough
  • 2 teaspoons prepared mustard
  • 2 cups thinly sliced zucchini (about 2 medium)
  • 1 cup chopped onion
  • 2 tablespoons butter
  • 2 large eggs, beaten
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons dried parsley flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat and prep crust. Preheat oven to 375°F. Unroll crescent dough and press into the bottom and up the sides of an ungreased 9-inch pie plate, sealing any perforations. Spread mustard evenly over the crust.
  2. Cook the vegetables. In a large skillet over medium heat, melt butter. Add zucchini and onion and cook, stirring occasionally, for 6–8 minutes until tender and lightly golden. Remove from heat.
  3. Combine filling. In a large bowl, whisk together the eggs, shredded mozzarella, parsley, salt, garlic powder, oregano, basil, and pepper. Stir in the cooked zucchini and onion mixture until evenly combined.
  4. Fill and bake. Pour the filling into the prepared crust and spread evenly. Bake at 375°F for 20–25 minutes, until the center is set and the crust is golden brown.
  5. Rest and serve. Let the pie rest for 5 minutes before slicing. Serve warm, straight from the dish.
