Creamy Sour Cream Lemon Pie — After a Week That Shook Us, Something Sweet for Sunday

Drove Tuesday.

Gayle had a hard Wednesday — breathing. Recovered. Frightening.

Dave and I had a long conversation Thursday night. He said, "Brenda. How is the diner looking?" I said, "Location-wise — not found yet. Money-wise — $225k saved. We're on pace for retirement." He said, "Good." We talked for an hour about the next ten years. It was a good conversation.

Sunday: pot roast.

After Gayle’s scare and the weight of that Thursday night conversation — retirement timelines, the diner, the next ten years — Sunday needed to end on something gentle and bright. The pot roast was grounding, but I wanted a little sweetness at the close of the day, something that felt like exhaling. This creamy sour cream lemon pie has been my quiet spring ritual for years: tart enough to wake you up, smooth enough to settle you back down.

Creamy Sour Cream Lemon Pie

Prep Time: 15 min | Cook Time: 15 min | Total Time: 30 min + 2 hrs chilling | Servings: 8

Ingredients

  • 1 pre-baked 9-inch graham cracker crust
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 cup whole milk
  • 1/2 cup fresh lemon juice (about 3 lemons)
  • 1 tablespoon lemon zest
  • 3 egg yolks, lightly beaten
  • 1/4 cup unsalted butter, cut into pieces
  • 1 cup full-fat sour cream
  • Whipped cream, for serving (optional)

Instructions

  1. Make the lemon curd base. In a medium saucepan, whisk together sugar and cornstarch. Gradually whisk in milk and lemon juice until smooth. Add lemon zest. Cook over medium heat, stirring constantly, until the mixture begins to thicken and bubble, about 8–10 minutes.
  2. Temper and cook the eggs. Slowly whisk about 1/2 cup of the hot mixture into the beaten egg yolks to temper them, then pour the egg mixture back into the saucepan. Continue cooking over medium-low heat, stirring constantly, for 2 more minutes.
  3. Finish the filling. Remove from heat and stir in the butter pieces until fully melted and incorporated. Let the mixture cool to room temperature, about 20 minutes, stirring occasionally.
  4. Fold in sour cream. Once cooled, gently fold in the sour cream until the filling is smooth and uniform. Do not whisk vigorously — fold gently to keep it creamy.
  5. Fill and chill. Pour the filling into the pre-baked graham cracker crust. Smooth the top with a spatula. Refrigerate for at least 2 hours, or until fully set.
  6. Serve. Slice and top with whipped cream and a curl of lemon zest if desired. Serve cold.
