Creamy Onion Pork Chops

Ingredients
- 4 bone-in pork chops, about 1 inch thick
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 1 packet (1 oz) dry onion soup mix
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup low-sodium chicken broth
- 1 medium yellow onion, thinly sliced
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Season the chops. Pat pork chops dry with paper towels. Season both sides generously with salt and black pepper.
- Sear. Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear 3 to 4 minutes per side until golden brown. Transfer to a plate and set aside.
- Soften the onion. Reduce heat to medium. Add sliced onion to the same skillet and cook, stirring occasionally, for 4 to 5 minutes until softened and lightly golden.
