Creamy Mushrooms

Ingredients
- 1 lb (450g) cremini or button mushrooms, cleaned and sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken or vegetable broth
- 3/4 cup heavy cream
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Prep the mushrooms. Clean mushrooms with a damp cloth and slice them evenly so they cook at the same rate. Set aside.
- Heat the pan. In a large skillet over medium-high heat, melt the butter with the olive oil until the butter begins to foam.
- Cook the mushrooms. Add the sliced mushrooms in a single layer. Let them sit undisturbed for 3–4 minutes until they develop a golden sear, then stir and cook another 3 minutes until tender and most of the moisture has evaporated.
- Add garlic and seasoning. Push the mushrooms to the edges of the pan, add the minced garlic to the center, and cook for 30 seconds until fragrant. Stir everything together. Add onion powder, thyme, salt, and pepper.
- Deglaze with broth. Pour in the broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes until slightly reduced.
- Add the cream. Reduce heat to medium-low and pour in the heavy cream. Stir gently and let it simmer for 3–4 minutes, until the sauce thickens enough to coat the back of a spoon.
- Finish and serve. Taste and adjust seasoning. Garnish with fresh parsley and serve warm over toast, rice, pasta, or alongside your main dish.
