Cranberry-Gorgonzola Stuffed Chicken — The Pan Was Empty by Nine

Cranberry-Gorgonzola Stuffed Chicken

Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1/2 cup crumbled gorgonzola cheese
  • 1/3 cup dried cranberries, roughly chopped
  • 2 tablespoons cream cheese, softened
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • Toothpicks or kitchen twine, for securing

Instructions

  1. Preheat the oven. Heat your oven to 400°F (205°C). Lightly grease a baking dish or oven-safe skillet with a drizzle of olive oil.
  2. Make the filling. In a small bowl, combine the gorgonzola, dried cranberries, cream cheese, and parsley. Stir until the mixture comes together into a cohesive stuffing. Taste and adjust seasoning if needed.
  3. Butterfly the chicken. Place each chicken breast flat on a cutting board. Using a sharp knife, cut a deep horizontal pocket into the thickest side of each breast, being careful not to cut all the way through.
  4. Stuff and secure. Spoon 2–3 tablespoons of the cranberry-gorgonzola filling into each pocket. Press the edges together and secure with toothpicks or tie with kitchen twine to hold the filling in place during cooking.
  5. Season the outside. In a small bowl, mix together the garlic powder, onion powder, dried thyme, salt, and pepper. Rub the olive oil over each stuffed breast, then coat evenly with the seasoning mixture.
  6. Sear for color. Heat an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2–3 minutes per side, until golden brown on the outside.
  7. Roast until cooked through. Transfer the skillet (or the chicken) to the prepared baking dish and roast in the preheated oven for 25–30 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
  8. Rest and serve. Remove from the oven and let the chicken rest for 5 minutes before removing toothpicks and slicing. Serve warm, with pan juices spooned over the top.
