I made a spring tart this week — asparagus and gruyere in a buttery crust, the first asparagus of the season, not quite warm enough yet but the asparagus arrived at the farmers market and I couldn't wait. Some impulses don't require justification. Spring tart in early March is its own argument.

The asparagus tart I made that week felt right for the moment — impulsive, seasonal, celebratory — but this cod and asparagus bake is the quieter version of that same impulse, the one I come back to when I want the first asparagus of the season to really shine without the fuss of pastry. After a week of big news and shifting energies, I needed something that let the ingredients speak for themselves. This is that recipe: simple enough to make on a Tuesday, special enough to feel like a small act of gratitude for everything that’s blooming.
Cod and Asparagus Bake

Ingredients
- 4 cod fillets (about 6 oz each)
- 1 lb fresh asparagus, trimmed
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 lemon, thinly sliced
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven. Heat oven to 400°F. Line a large rimmed baking sheet with parchment paper or lightly grease with cooking spray.
- Season the asparagus. Arrange trimmed asparagus in a single layer on one side of the prepared baking sheet. Drizzle with 1 tablespoon olive oil, season with salt and pepper, and toss lightly to coat.
- Prepare the cod. Pat cod fillets dry with paper towels and place on the other side of the baking sheet. Drizzle with remaining 1 tablespoon olive oil and fresh lemon juice. Sprinkle evenly with minced garlic, thyme, paprika, salt, and pepper.
- Add lemon slices. Lay lemon slices over the top of the cod fillets for fragrance and to keep the fish moist during baking.
- Bake. Transfer the baking sheet to the preheated oven and bake for 18–20 minutes, or until the cod flakes easily with a fork and the asparagus is tender with lightly caramelized tips.
- Garnish and serve. Remove from oven, discard lemon slices if desired, and scatter fresh parsley over the top. Serve immediately, directly from the pan.
