Sophia is preparing for exams with an intensity that would concern me if it were directed at anything other than academic achievement. She talked about it at dinner for twenty minutes and I understood approximately half of it but all of the joy behind it.
Mama is 82 and still at the bakery at 4 AM. I do not know how much longer she will do this. I do not ask. You do not ask Voula Papadopoulos about endings. You stand next to her and roll phyllo and trust that the beginning continues as long as the hands are moving.
I made moussaka because my hands needed the comfort of the familiar. Eggplant, meat sauce with cinnamon, the bechamel smooth as a lake at dawn. The kitchen smelled like olive oil and the coming rain and I thought: this is what survives. Not the money or the stress or the arguments about phyllo. The food survives. The recipes survive. The love baked into every dish survives.

These Classic Stuffed Shells carry that same logic: pasta cradling ricotta, blanketed in sauce, melted into something greater than the sum of its parts. When Mama is still rolling dough at 82 and Sophia is chasing futures I can barely keep up with, the kitchen asks only that I show up and layer, and that I always know how to do.
Classic Stuffed Shells

Ingredients
- 1 box (12 oz) jumbo pasta shells
- 2 cups whole-milk ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese, divided
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lb ground beef or Italian sausage (optional)
- 3 cups marinara sauce, divided
- Olive oil, for the pan
Instructions
- Cook the shells. Bring a large pot of salted water to a boil. Cook jumbo shells 2 minutes less than package directions (they will finish in the oven). Drain and spread on a lightly oiled baking sheet to prevent sticking. Preheat oven to 375°F.
- Brown the meat (if using). In a skillet over medium-high heat, cook ground beef or sausage until no longer pink, breaking it apart as it cooks. Drain excess fat and set aside to cool slightly.
- Make the filling. In a large bowl, combine ricotta, 1 1/2 cups mozzarella, 1/4 cup Parmesan, egg, garlic, parsley, Italian seasoning, salt, and pepper. Fold in the cooked meat if using. Stir until evenly combined.
- Assemble the baking dish. Spread 1 cup of marinara sauce evenly across the bottom of a 9x13-inch baking dish. Using a spoon or piping bag, fill each shell with 2–3 tablespoons of the ricotta mixture and nestle them open-side up in a single layer in the dish.
- Top and cover. Spoon the remaining 2 cups of marinara over the filled shells. Sprinkle the remaining 1/2 cup mozzarella and 1/4 cup Parmesan evenly over the top. Cover tightly with foil.
- Bake covered. Bake at 375°F for 30 minutes until the sauce is bubbling and the shells are heated through.
- Uncover and finish. Remove the foil and bake an additional 12–15 minutes until the cheese on top is golden and slightly blistered. Let rest 5 minutes before serving.
