Labor Day weekend and the shift is happening — that bittersweet turn from summer to fall that Milwaukee does better than anywhere. The air cools overnight, the light goes golden, the lake turns a deeper blue. You start wearing flannels in the morning and t-shirts by afternoon. The Brewers are fading out of the playoff race, which is their late-summer tradition, and the Packers are about to start, which is the real Milwaukee new year.
Tom hosted the Labor Day cookout. Same as every year: brats, burgers, corn, his potato salad versus mine. This year Megan brought Colleen's soda bread and Patrick sent a bottle of whiskey with a note that said, "For the grill master." Tom read the note and said, "I like this guy." Patrick and Tom have met exactly twice and they already have a friendship built on meat, alcohol, and monosyllabic compliments. It's beautiful.
Megan goes back to school next week. A new batch of fourth graders, a new set of Omars and Lilys and Jaylens. She's been setting up her classroom all week — staying late, cutting out letters, arranging desks. She comes home with marker on her hands and tape in her hair and she's happier than she's been all summer. Some people are built for summer. Megan is built for September. She comes alive when there are small humans to take care of.
September pierogi challenge: apple and cinnamon. Sliced Honeycrisp apples cooked down with butter, brown sugar, and cinnamon, mixed with a touch of cream cheese. An apple pie pierogi, essentially. This is the kind of thing I would have laughed at three years ago — a pierogi should be savory, a pierogi should be traditional — and now I understand that a pierogi is a vehicle, and the vehicle can carry anything worth eating.
One year of experimental pierogi fillings is almost done. Twelve months, twelve fillings. Some were great (strawberry-farmer cheese, corn-cheddar). Some were fine (sweet potato-black bean). All of them taught me something about what pierogi can be. Babcia would not have made any of them. Babcia would have eaten all of them.
The apple cinnamon pierogi filling — Honeycrisp apples, butter, brown sugar, cinnamon, a touch of cream cheese — kept me thinking about warm, spiced breakfasts all week, the kind that make sense the moment the overnight air starts to bite. Megan was up early every morning setting up her classroom, and I wanted something on the stove that said September without requiring much from either of us at 6 a.m. This Cinnamon Toast Breakfast Quinoa landed exactly right: the cinnamon warmth of the pierogi filling, minus the dough work, in a bowl that’s ready before the flannel even comes off.
Cinnamon Toast Breakfast Quinoa

Ingredients
- 1 cup quinoa, rinsed well
- 2 cups whole milk (or unsweetened oat milk)
- 1/2 cup water
- 1 tablespoon unsalted butter
- 2 tablespoons brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon fine salt
- 1 small Honeycrisp apple, cored and thinly sliced, for topping
- 2 tablespoons chopped toasted pecans, for topping
- Maple syrup or honey, to drizzle
Instructions
- Combine and bring to a boil. Add the rinsed quinoa, milk, and water to a medium saucepan over medium-high heat. Stir to combine and bring just to a boil, watching carefully so the milk doesn’t scorch.
- Simmer until absorbed. Reduce heat to low, cover, and cook for 15–18 minutes, stirring occasionally, until the quinoa has absorbed most of the liquid and the mixture is creamy and porridge-like.
- Stir in the flavor base. Remove from heat. Stir in the butter, brown sugar, cinnamon, vanilla, and salt until the butter is melted and everything is evenly combined. Taste and adjust cinnamon or sugar as needed.
- Prepare the apple topping. While the quinoa rests, warm a small skillet over medium heat. Add the apple slices and a pinch of cinnamon and cook for 2–3 minutes, turning once, until just softened and lightly golden at the edges.
- Assemble and serve. Divide the quinoa between two bowls. Top each with warm apple slices, toasted pecans, and a drizzle of maple syrup. Serve immediately.
