Ingredients
- 1 cup (2 sticks) unsalted butter, cut into pieces
- 8 oz good-quality bittersweet chocolate, coarsely chopped
- 1 1/4 cups granulated sugar
- 4 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon fine salt
- 2 tablespoons unsweetened cocoa powder, for dusting
- For the ganache topping:
- 4 oz bittersweet chocolate, finely chopped
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
- Powdered sugar or flaky sea salt, for finishing (optional)
Instructions
- Prepare the pan. Preheat oven to 375°F. Grease a 9-inch springform pan and dust with cocoa powder, tapping out any excess. Line the bottom with a circle of parchment paper.
- Melt butter and chocolate. Combine butter and chopped bittersweet chocolate in a heatproof bowl set over a pot of barely simmering water. Stir gently until fully melted and smooth. Remove from heat and let cool for 5 minutes.
- Build the batter. Whisk sugar into the melted chocolate mixture until combined. Add eggs one at a time, whisking well after each addition. Stir in vanilla. Fold in flour and salt until just incorporated — do not overmix.
- Bake. Pour batter into the prepared pan and smooth the top. Bake at 375°F for 30–35 minutes, until the center is just set and a toothpick inserted 1 inch from the edge comes out clean (the center will remain slightly fudgy). Cool in the pan on a wire rack for 20 minutes, then release the springform sides and cool completely.
- Make the ganache. Place the finely chopped chocolate in a small heatproof bowl. Heat heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour hot cream over chocolate and let sit 2 minutes without stirring, then whisk from the center outward until glossy and smooth. Stir in butter until incorporated.
- Finish the torte. Pour ganache over the cooled torte, using a spatula to gently coax it toward the edges. Let set at room temperature for 30 minutes, or refrigerate for 15 minutes to firm. Dust lightly with powdered sugar or a pinch of flaky sea salt before serving.
