Chocolate Sandwich Cookies — The Kitchen Has Claimed Another Carter

December. Christmas. The tree goes up — same lean, same angel. Aiden helps. Zaria helps by undoing what Aiden does. The apartment smells like pine (fake pine — it is a fake tree) and the cookies I am baking, because I bake now. Sugar cookies, peanut butter cookies, and Mama's snickerdoodles (the recipe Marc loves, which I learned from Mama in November). The baking has opened a new room in the kitchen house: the room of flour and butter and sugar, the room where patience produces sweetness. I made food gifts again: dry rub in mason jars, barbecue sauce in bottles, and — new this year — a jar of my gumbo base (the roux, pre-made, frozen in portions, to be mixed with broth and protein for quick gumbo). The gumbo base was Jerome's request. "I want to make gumbo at home," he said. "But I can't make the roux." I said, "Nobody can make the roux. It took me five years." He said, "So give me the cheat code." The gumbo base is the cheat code. Christmas Eve at Mama's. The ham, the sides, the family. Dad is thinner but present. Marc is there, loud, alive, twenty-five and invincible. Keisha brought wine. Darius brought DJ, who is two and running. Brianna did not come (it is not her year for Christmas Eve), but she sent a gift for each child and a text to me: "Merry Christmas. Feed them well." I will. I always will. Christmas morning: Aiden got a new basketball (every year, his primary request). Zaria got a real apron — kid-sized, purple, with her name embroidered. She put it on and went directly to the kitchen and stood at the counter and said, "I'm ready." She is three. She is ready. She has been ready since she could stand on the step stool and reach the bowl. The kitchen has claimed another Carter.

Zaria put on that purple apron and said she was ready, and honestly — I believed her. The whole December felt like that: sweetness earned through patience, the kitchen opening up room after room. I’ve been doing sugar cookies and snickerdoodles, but these chocolate sandwich cookies are the ones I want to add to the rotation next Christmas, the kind you can press together with little hands standing on a step stool. Rich, a little fancy, and simple enough that a three-year-old with an embroidered apron and a determined look can be part of making them.

Chocolate Sandwich Cookies

Prep Time: 25 min | Cook Time: 10 min | Total Time: 35 min (plus chilling) | Servings: 24 sandwich cookies

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • For the filling:
  • 4 tablespoons unsalted butter, softened
  • 1 1/2 cups powdered sugar, sifted
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Make the dough. Beat butter and sugar together in a large bowl until light and fluffy, about 3 minutes. Add the egg and vanilla and mix until combined.
  2. Add dry ingredients. Sift together the flour, cocoa powder, baking soda, and salt. Add to the butter mixture and stir until a soft dough forms. Do not overmix.
  3. Chill. Divide the dough in half, flatten each portion into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour or up to 2 days.
  4. Preheat and roll. Preheat oven to 350°F. On a lightly floured surface, roll dough to 1/8-inch thickness. Cut with a round 2-inch cookie cutter.
  5. Bake. Place rounds on parchment-lined baking sheets, spacing about 1 inch apart. Bake 9—11 minutes, until set at the edges. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. Make the filling. Beat softened butter until smooth. Add powdered sugar, cream, vanilla, and salt. Beat on medium-high until fluffy and spreadable, about 2 minutes. Add more cream a teaspoon at a time if needed.
  7. Sandwich. Spread or pipe about 1 teaspoon of filling onto the flat side of one cookie and press a second cookie gently on top. Repeat with remaining cookies.
  8. Set and store. Let sandwiched cookies rest 15 minutes so the filling firms slightly. Store in an airtight container at room temperature up to 5 days.

DeShawn is a thirty-six-year-old single dad, auto plant worker, and a man who didn't learn to cook until his wife left and his five-year-old asked, "Daddy, can you cook something?" He called his mama, who came over with two bags of groceries and spent six months teaching him the basics. Now he's the dad at the cookout who brings the ribs, the guy at the plant whose leftover gumbo starts fights, and living proof that it's never too late to learn.
