Chocolate Pudding Delight -- The Cake That Carries Every Birthday Forward

Happy birthday to me. Forty years old as of Monday, August fourteenth. I am sitting in the sunlight at the kitchen table writing this, and the house is empty because Dave took all four kids somewhere, I do not know where and I do not care, and the silence is the most beautiful sound I have ever heard.

I have been alive for forty years, and here is what I know: I know how to drive an eighteen-wheeler through a blizzard. I know how to feed six people on two dollars a day. I know how to make chili in a slow cooker at seventy miles per hour. I know how to hold a child who is breaking and not break myself. Mostly. Mostly I know how not to break.

I baked my own cake again. The chocolate sheet cake, same as last year, same as always. Ingredients

  • Crust:
  • 1 cup all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup finely chopped pecans or walnuts (optional)
  • Cream Cheese Layer:
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (such as Cool Whip), thawed
  • Pudding Layer:
  • 2 packages (3.9 oz each) instant chocolate pudding mix
  • 3 cups cold whole milk
  • Topping:
  • 2 cups whipped topping, thawed
  • 2 tablespoons cocoa powder or chocolate shavings, for garnish

Instructions

  1. Make the crust. Preheat oven to 350°F. Mix flour, melted butter, and nuts (if using) until crumbly. Press evenly into the bottom of a 9x13-inch baking dish. Bake for 18–20 minutes until lightly golden. Remove from oven and let cool completely.
  2. Make the cream cheese layer. Beat softened cream cheese and powdered sugar together until smooth and fluffy. Fold in 1 cup whipped topping until combined. Spread evenly over the cooled crust.
  3. Make the pudding layer. Whisk together the chocolate pudding mix and cold milk for 2 minutes until thickened. Let stand for 3–5 minutes, then spread carefully over the cream cheese layer.
  4. Add the topping. Spread the remaining 2 cups of whipped topping evenly over the pudding layer. Dust with cocoa powder or scatter chocolate shavings across the top.
  5. Chill and serve. Refrigerate for at least 2 hours (or overnight) before slicing. Serve cold, cut into squares directly from the pan.
