- 2/3 cup unsweetened cocoa powder

- 1/3 cup milk

Instructions
- Preheat and prep. Preheat oven to 350°F. Line two standard 12-cup muffin tins with paper liners and set aside.
- Mix the dry ingredients. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until evenly combined.
- Mix the wet ingredients. In a separate bowl, whisk eggs, buttermilk, cooled coffee, vegetable oil, and vanilla extract until smooth.
- Combine. Pour the wet ingredients into the dry ingredients and stir until just combined — do not overmix. The batter will be thin; that’s correct.
- Fill and bake. Fill each cupcake liner about 2/3 full. Bake 18–20 minutes, until a toothpick inserted in the center comes out with just a few moist crumbs. Cool completely on a wire rack before filling or frosting.
- Make the filling. Beat cream cheese until smooth. Add marshmallow creme, powdered sugar, and vanilla; beat on medium until fluffy and well combined, about 2 minutes.
- Fill the cupcakes. Using a small paring knife or a cupcake corer, cut a small well in the center of each cooled cupcake about 1 inch deep. Spoon or pipe approximately 1 tablespoon of marshmallow cream filling into each well.
- Make the frosting. Beat butter and cocoa together until blended. Gradually add powdered sugar, alternating with milk, beating on medium-high until smooth and spreadable. Mix in vanilla. Add a splash more milk if needed to reach piping consistency.
- Frost and serve. Pipe or spread chocolate frosting over each filled cupcake. Serve at room temperature. Store covered at room temperature up to 2 days or refrigerate up to 5 days.
