Chocolate Chip One Bowl Brownies — The Annual Cake That Marks the Start of Summer

Last day of school. Summer begins. The same feeling as every year: freedom tinged with the logistical anxiety of keeping four children alive and fed for twelve weeks without the help of the public school system. I love summer. I also fear summer. These feelings coexist peacefully inside me because I am a mother and mothers contain contradictions the way the sky contains weather.

Amber is officially a sophomore. Tyler is officially a seventh-grader. Justin is officially a seventh-grader. Josie is officially a fourth-grader. They are all officially older than they were in August, and I am officially older too, though I have stopped counting because forty-one sounds like forty-two sounds like forty-three and at some point the numbers blur and you are just alive, just here, just making dinner and driving truck and calling your mother and hoping everyone survives until September.

I made the end-of-school chocolate sheet cake, the annual cake, the one that marks the transition from structure to freedom. The kids ate it at the kitchen table and were loud and excited and full of plans for the summer: Tyler wants to build a bigger go-kart. Justin wants to play football every day. Josie wants to swim. Amber wants to read, which is Amber plan for every season and every occasion and which I support completely.

The garden is growing beautifully. The tomatoes have small green fruits. The cucumbers are climbing the trellis like they have somewhere important to be. The basil is thick and fragrant. The lettuce is producing salads. This year feels more abundant than last year, maybe because I planted more, or maybe because the second year of anything is always better than the first, because you know what you are doing, and knowledge is its own kind of fertilizer.

I prepped the freezer for summer: ten meals, same as last year. Tater tot casserole, sloppy joes, chili, enchiladas, hamburger soup, chicken and rice casserole. Dave and Amber can pull from the freezer when I am on the road. The system works. It is not elegant. It is sturdy. Like everything in this family. Like everything in Nebraska. Sturdy is the standard we aspire to, and we meet it every time.

The annual chocolate cake is less about the recipe and more about the ritual — the signal that we have all survived another school year and that summer, with all its freedom and chaos, has officially arrived. This year I kept it simple, the way I keep everything simple when I am also prepping ten freezer meals and watching tomatoes grow and tracking four children’s summer ambitions. One bowl. Chocolate. Done. These brownies are that cake for me when I need the celebration without the production — rich enough to feel like a real occasion, easy enough that I could pull them together between loading the freezer and listening to Tyler explain his go-kart engineering plans.

Chocolate Chip One Bowl Brownies

Prep Time: 10 minutes | Cook Time: 30 minutes | Total Time: 40 minutes | Servings: 16

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3/4 cup semi-sweet chocolate chips, divided

Instructions

  1. Preheat and prep. Preheat your oven to 350°F. Grease an 8x8-inch baking pan or line it with parchment paper and set aside.
  2. Melt the butter. In a large microwave-safe bowl, melt the butter in 30-second intervals, stirring between each, until fully melted. Let cool for 2 minutes.
  3. Mix wet ingredients. Whisk the sugar into the melted butter until combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. Add dry ingredients. Add the cocoa powder, flour, salt, and baking powder directly to the same bowl. Stir until just combined — do not overmix.
  5. Fold in chocolate chips. Stir in 1/2 cup of the chocolate chips, reserving the remaining 1/4 cup for topping.
  6. Bake. Spread the batter evenly into the prepared pan. Scatter the reserved chocolate chips over the top. Bake for 28–32 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter).
  7. Cool and cut. Allow the brownies to cool in the pan for at least 15 minutes before cutting into 16 squares. For cleaner cuts, cool completely before slicing.
