Chocolate Chip Cookie Dough Cheesecake

Ingredients

  • Chocolate Crust
  • 2 cups chocolate graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • Cookie Dough Layer
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 tablespoons whole milk
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup mini semi-sweet chocolate chips
  • Cheesecake Filling
  • 3 packages (8 oz each) full-fat cream cheese, softened to room temperature
  • 3/4 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup full-fat sour cream
  • 1 teaspoon pure vanilla extract
  • 1/2 cup mini semi-sweet chocolate chips
  • Topping
  • 1/2 cup mini semi-sweet chocolate chips
  • Whipped cream, for serving (optional)

Instructions

  1. Preheat and prepare. Preheat your oven to 325°F. Grease a 9-inch springform pan and wrap the outside tightly in two layers of heavy-duty aluminum foil to prepare for a water bath.
  2. Make the crust. In a medium bowl, stir together the chocolate graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom and 1 inch up the sides of the prepared springform pan. Bake for 10 minutes, then set aside to cool.
  3. Make the cookie dough. Beat the softened butter with both sugars on medium speed until light and fluffy, about 2 minutes. Add the milk and vanilla and mix to combine. Reduce to low speed and mix in the flour just until incorporated — do not overmix. Fold in 3/4 cup mini chocolate chips. Set aside.
  4. Make the cheesecake filling. Beat the cream cheese and sugar together on medium speed until completely smooth and creamy, about 3 minutes. Add the eggs one at a time, beating on low after each addition just until blended. Mix in the sour cream and vanilla until smooth. Fold in 1/2 cup mini chocolate chips.
  5. Layer the cheesecake. Pour half the cheesecake filling into the cooled crust and spread evenly. Drop rounded tablespoons of the cookie dough over the filling, pressing lightly to nestle them in. Pour the remaining cheesecake filling over the top and spread gently to cover.
  6. Water bath bake. Place the foil-wrapped springform pan in a large roasting pan. Fill the roasting pan with hot water to reach 1 inch up the sides of the springform pan. Bake at 325°F for 60–70 minutes, until the edges are set and the center jiggles only slightly when gently shaken.
  7. Cool slowly. Turn off the oven and crack the oven door open. Let the cheesecake sit in the oven for 1 hour. Remove from the water bath, run a thin knife around the edges, and allow to cool completely on a wire rack at room temperature.
  8. Chill and finish. Cover loosely and refrigerate for at least 4 hours or overnight. Before serving, sprinkle the remaining 1/2 cup mini chocolate chips over the top. Release the springform ring, slice, and serve with whipped cream if desired.
