Chive & Onion Hash Brown Potatoes

Ingredients
- 3 cups frozen shredded hash brown potatoes, thawed
- 1/2 cup sour cream
- 1/4 cup cream cheese with chives and onion, softened
- 1/4 cup shredded sharp cheddar cheese
- 3 tablespoons fresh chives, thinly sliced
- 1/4 cup yellow onion, finely diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
Instructions
- Prep the potatoes. Spread thawed hash browns on a clean kitchen towel and wring out as much moisture as possible. Dry potatoes crisp better — don’t skip this step.
- Make the mix. In a large bowl, combine the dried hash browns, sour cream, cream cheese, cheddar, onion, garlic powder, salt, and pepper. Fold together until evenly coated.
- Heat the pan. In a large cast-iron or non-stick skillet over medium-high heat, melt butter with olive oil until shimmering.
- Cook the potatoes. Add the hash brown mixture and press into an even layer. Cook undisturbed for 10–12 minutes until the bottom is deeply golden and crisp.
- Flip and finish. Using a wide spatula, flip the hash brown cake in sections. Cook another 10–12 minutes until the second side is golden and the center is cooked through.
- Garnish and serve. Transfer to a platter and scatter fresh chives over the top. Serve hot directly from the pan alongside whatever anchors your table.
