- 4 bone-in, skin-on chicken thighs (about 2 lbs)
- 1 1/2 cups chicken broth
- 1 cup couscous
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 small zucchini, diced
- 1 cup cherry tomatoes, halved
- 2 tablespoons fresh parsley, chopped
- 1 lemon, cut into wedges for serving
Instructions
- Season the chicken. Pat chicken thighs dry with paper towels. Rub with olive oil, garlic, cumin, coriander, paprika, salt, and pepper. Let rest at room temperature for 10 minutes while the oven preheats to 400°F.
- Roast the chicken. Place chicken thighs skin-side up in an oven-safe skillet or baking dish. Roast for 28–32 minutes, until the skin is golden and the internal temperature reaches 165°F.
