Chicken Sweet Potato Skillet — The Humble, Hearty Meal That Felt Exactly Right

A good week in real estate: 2 closings, 4 new leads, the satisfaction of matching families with houses the way Mama matches fillings with phyllo — instinctively, confidently. I brought spanakopita to an open house. The buyers ate it. They made an offer.

I drove to Tarpon Springs for Sunday dinner. The drive takes forty minutes if the traffic behaves. It never behaves. But I make the drive because the table at Mama's house is non-negotiable, and Sunday dinner is the thread that holds this family together.

I stood in my kitchen this evening and looked at the counter where I have made a thousand meals for my family and thought: this is what I do. I feed people. I sell them houses and I feed them food and I keep showing up because showing up is the only recipe that never fails.

I made lemon chicken soup — not the ceremony of avgolemono but simpler, humbler. Roasted chicken, potatoes, lemon. A hug in a bowl. We ate at the kitchen table, just the two of us, and for a moment the house was not quiet or loud — it was exactly right. Full. Fed. The sound of forks on plates is the sound I love most in this world.

The olive oil in my kitchen is from a Greek import shop in Tampa that sources from Kalamata. It is expensive. It is worth it. I use it on everything — salads, fish, bread, vegetables, the edge of a pot of soup — because olive oil is not a condiment in this family, it is a philosophy. Use it generously. Use it without apology. Use it the way you use love: poured freely, never measured, always more than you think you need.

That lemon chicken soup I made — roasted chicken, potatoes, lemon, olive oil poured without apology — reminded me that the best meals are never complicated. They’re just honest. This Chicken Sweet Potato Skillet carries that same spirit: one pan, warm spices, tender chicken, and root vegetables that taste like someone cared enough to show up. On a week where I closed two deals and drove forty minutes each way just to sit at my mother’s table, a dish this grounding felt less like cooking and more like exhaling.

Chicken Sweet Potato Skillet

Prep Time: 10 minutes | Cook Time: 25 minutes | Total Time: 35 minutes | Servings: 4

Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 3 tablespoons good olive oil, divided
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped, for serving
  • Lemon wedges, for serving

Instructions

  1. Season the chicken. In a bowl, toss the chicken pieces with the smoked paprika, cumin, oregano, salt, and black pepper until evenly coated. Set aside.
  2. Start the sweet potatoes. Heat 2 tablespoons of olive oil in a large cast-iron or heavy skillet over medium-high heat. Add the diced sweet potatoes in a single layer and cook undisturbed for 4–5 minutes until golden on the bottom. Stir and cook another 3–4 minutes. Transfer to a plate.
  3. Cook the chicken. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the seasoned chicken in a single layer and sear for 4–5 minutes without stirring, until golden. Flip and cook another 3–4 minutes until cooked through. Transfer to the plate with the sweet potatoes.
  4. Build the base. In the same skillet, add the onion and bell pepper. Cook over medium heat, stirring, for 3–4 minutes until softened. Add the garlic and cook 1 minute more until fragrant.
  5. Bring it together. Return the sweet potatoes and chicken to the skillet. Toss everything together over medium heat for 2 minutes until warmed through and well combined. Taste and adjust salt as needed.
  6. Serve. Scatter fresh parsley over the top and serve directly from the skillet with lemon wedges on the side for squeezing.
