It felt right — a dish that refuses to choose between the place you come from and the place you’re feeding your children.
Chicken Curry Lasagna

Ingredients
- 12 lasagna noodles, cooked al dente and drained
- 2 tablespoons olive oil or neutral oil
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup chicken broth
- 3 cups cooked chicken, shredded or diced (rotisserie works well)
- 1 teaspoon kosher salt, plus more to taste
- 1 container (15 oz) whole-milk ricotta cheese
- 1 large egg
- 1/4 cup fresh cilantro, chopped, plus more for garnish
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup shredded Parmesan cheese
Instructions
- Preheat oven. Heat oven to 375°F. Lightly grease a 9x13-inch baking dish and set aside.
- Build the curry sauce. Heat oil in a large skillet or saucepan over medium heat. Add onion and cook, stirring occasionally, until softened and translucent, about 5–6 minutes. Add garlic and ginger and cook 1 minute more until fragrant.
- Bloom the spices. Add curry powder, cumin, turmeric, and cayenne to the pan. Stir constantly for 30 seconds until the spices coat the onions and smell toasted. This step matters — don’t rush it.
- Simmer the sauce. Pour in diced tomatoes, coconut milk, and chicken broth. Stir to combine, scraping up any spiced bits from the bottom. Bring to a gentle simmer and cook uncovered for 10 minutes until the sauce thickens slightly. Stir in shredded chicken and salt. Remove from heat.
- Mix the ricotta layer. In a medium bowl, stir together ricotta, egg, cilantro, and 1/4 teaspoon salt until smooth.
- Layer the lasagna. Spread a thin layer of curry sauce on the bottom of the prepared baking dish. Lay 4 lasagna noodles over the sauce, overlapping slightly. Spread half the ricotta mixture over the noodles, then spoon over one-third of the remaining curry sauce, then sprinkle with 2/3 cup mozzarella. Repeat: 4 noodles, remaining ricotta, another third of curry sauce, 2/3 cup mozzarella. Finish with the final 4 noodles, remaining curry sauce, and the last 2/3 cup mozzarella plus all of the Parmesan.
- Bake covered. Cover the dish tightly with foil and bake for 30 minutes.
- Bake uncovered. Remove foil and bake an additional 15–20 minutes until the top is bubbling and golden at the edges.
- Rest before slicing. Let the lasagna rest for 10 minutes before cutting — this allows the layers to set and makes for cleaner slices. Scatter fresh cilantro over the top before serving.
