7-0. Three weeks until the end of the regular season. This team is the best I've coached at this school — not necessarily in individual talent, though Diego and DeShawn's successor at linebacker are exceptional, but in cohesion. They play for each other in a way that multiplies individual talent. The defensive captain, a senior named Isaiah Powell, holds the locker room with a quiet authority that I'd bottle and give to every defensive captain I've ever had if I could. Some years the people assemble. This is that year.
Diego has been more reflective this fall than in previous seasons. He comes to my office some Mondays not for film but to talk — about what he's learned here, about what he's looking forward to, about what he'll miss. These conversations are the best conversations of my career. Not because they're about me. They're not. They're about him and about what we built together, which is a conversation a head coach and a player only get to have at this level when the player is leaving and both people know what was made.
He said something last Monday that I'm keeping: "You never coached me differently than anyone else." He said it like a fact, not like a compliment. He was right. He was exactly right. And I need him to know that what he built — the 3.9 GPA, the scholarship, the leadership in the locker room, the way his teammates follow him — he built those things through his own work. I made the conditions. He made himself. That's the only honest accounting.
Tamale prep starts this week. Mom is driving up next weekend. The season is too busy for the full ceremony; we'll do a condensed version. Fifteen dozen instead of twenty. The first time in years we've made less than the usual amount. The decision felt significant and also simple. Everything is enough when you have enough of what matters.
Mom drives up this weekend and we’re doing fifteen dozen instead of twenty — and somehow that feels exactly right. When the tamale prep runs long and the masa table is covered and everyone’s hands are full, we need something already in the oven waiting for us: something that does its work quietly, the way the best people do. This Chicken Chiles Rellenos Strata has become that dish for us — layered, warm, and built to feed a table of people who earned it together. It carries the same spirit as the season itself: everything you need, nothing wasted.
Chicken Chiles Rellenos Strata
Prep Time: 20 min | Cook Time: 55 min | Total Time: 1 hr 15 min | Servings: 8
Ingredients
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 2 cans (7 oz each) whole green chiles, drained and split open
- 2 cups shredded Monterey Jack cheese, divided
- 1 cup shredded sharp cheddar cheese
- 8 slices sturdy white or sourdough bread, cubed (about 6 cups)
- 6 large eggs
- 2 cups whole milk
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 cup salsa verde, plus more for serving
- Sour cream and fresh cilantro, for serving
Instructions
- Prepare the baking dish. Grease a 9x13-inch baking dish. Spread half the bread cubes in an even layer across the bottom.
- Layer the chiles and chicken. Lay the split green chiles flat over the bread. Distribute the shredded chicken evenly over the chiles, then sprinkle with 1 cup of the Monterey Jack cheese.
- Add remaining bread and cheese. Top with the remaining bread cubes. Sprinkle the cheddar and the remaining 1 cup Monterey Jack cheese evenly over the top.
- Make the custard. In a large bowl, whisk together the eggs, milk, cumin, garlic powder, smoked paprika, salt, and black pepper until fully combined. Stir in the salsa verde.
- Pour and rest. Pour the egg mixture evenly over the layered strata, pressing the bread gently to absorb the liquid. Cover with plastic wrap and refrigerate for at least 30 minutes, or overnight for best results.
- Bake. Preheat oven to 350°F. Remove the strata from the refrigerator and let it sit at room temperature for 15 minutes. Bake uncovered for 50–55 minutes, until the top is golden and the center is set when you jiggle the pan.
- Rest and serve. Let the strata rest for 10 minutes before cutting. Serve with extra salsa verde, sour cream, and fresh cilantro.
