Colette, twelve — painting, writing, organizing the world into something beautiful. Rémy, ten (turning eleven this summer) — cooking, fishing, hunting, carrying the chain forward with hands that know more than most adults' hands and a heart that knows more than most adults' hearts. Chicken Chiles Rellenos Casserole

Ingredients
- 2 lbs boneless, skinless chicken breasts, cooked and shredded
- 2 cans (7 oz each) whole green chiles, drained and split open
- 2 cups cooked long-grain white rice
- 2 cups shredded Monterey Jack cheese, divided
- 1 cup shredded sharp cheddar cheese
- 4 large eggs
- 1 1/2 cups whole milk
- 1/2 cup sour cream
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter, for greasing the dish
Instructions
- Preheat & prep. Preheat your oven to 350°F. Butter a 9x13-inch baking dish and set aside.
- Layer the chiles. Lay the split green chiles flat across the bottom of the prepared baking dish in a single layer, covering as much surface as possible.
- Add chicken and rice. Spread the shredded chicken evenly over the chile layer, then spoon the cooked rice over the chicken in an even layer.
- Add cheese. Sprinkle 1 1/2 cups of the Monterey Jack cheese over the rice layer, distributing evenly.
- Make the custard. In a large bowl, whisk together the eggs, milk, and sour cream until smooth. Stir in the cumin, garlic powder, smoked paprika, salt, and pepper.
- Pour & top. Pour the egg mixture evenly over the casserole. Top with the remaining Monterey Jack and all of the cheddar cheese.
- Bake. Bake uncovered for 40–45 minutes, until the custard is set in the center and the cheese on top is golden and bubbling. A knife inserted in the center should come out clean.
- Rest & serve. Let the casserole rest for 5–10 minutes before cutting. Serve warm, straight from the dish.
