Summer in pandemic. School is out — or it was out, or it never quite ended and now it's technically summer and nobody knows what September will look like. The kids have been home for three months. We've found a rhythm: morning structure, afternoon looseness, dinner together every night without exception. The dinner-together-every-night rule is the one I hold to most firmly. Everything else can flex. That doesn't.
Sofia started a running journal. She writes in it after every run: the route, the weather, how her legs felt, what she thought about. She's twelve and she's already doing the thing that serious athletes do — treating the body as a data set and the mind as part of the training. She asked me once if football coaches keep journals. Chicken Chiles Rellenos Alfredo

Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 cans (4 oz each) diced green chiles, drained
- 1 poblano pepper, roasted, peeled, and chopped
- 2 cups heavy cream
- 1 cup chicken broth
- 1 1/2 cups freshly grated Parmesan cheese
- 4 oz cream cheese, softened and cubed
- 12 oz fettuccine or pappardelle, cooked al dente and reserved
- 1/2 cup queso fresco, crumbled, for serving
- 2 tablespoons fresh cilantro, chopped, for serving
- Lime wedges, for serving
Instructions
- Season and sear the chicken. Toss chicken pieces with cumin, smoked paprika, salt, and pepper. Heat olive oil in a large, deep skillet over medium-high heat. Add chicken and cook, stirring occasionally, until golden and cooked through, about 7–8 minutes. Transfer chicken to a plate and set aside.
- Bloom the aromatics. Reduce heat to medium. Add garlic to the same skillet and cook 30 seconds until fragrant. Add the diced green chiles and roasted poblano and stir to combine, scraping up any browned bits from the bottom of the pan.
- Build the alfredo sauce. Pour in the chicken broth and heavy cream. Bring to a gentle simmer and cook, stirring occasionally, for 5 minutes until the liquid reduces slightly.
- Melt in the cheeses. Reduce heat to low. Add the cream cheese cubes, stirring until fully melted and smooth. Add the Parmesan in three additions, stirring well after each, until the sauce is creamy and coats the back of a spoon. Taste and adjust salt as needed.
- Combine and finish. Return the seared chicken to the skillet and stir to coat. Add the cooked pasta and toss everything together until the noodles are evenly sauced. If the sauce is too thick, add a splash of reserved pasta water and stir.
- Serve. Plate immediately and top each serving with crumbled queso fresco, fresh cilantro, and a squeeze of lime.
