Cheesy Chicken — Shells — The Pot You Come Back To When You Need to Find Your Center

March, and the world smells like it's waking up again. The crocuses, faithful and reliable. The mud under the melting snow. The days getting noticeably longer in a way that makes six p.m. feel different than it did in January. I walk outside after dinner now when I couldn't before because it was dark at five. These small expansions of light matter more than I expected.

I've been anxious this month. Not any particular thing — a generalized undercurrent of unease that I've been aware of and managing and talking to my therapist about. She points out that I have more external-facing things happening right now than at any previous point: the book coming out in three months, the channel at a size where public comments include unkind ones fairly regularly, the workshops expanding beyond what one person can manage alone. All of these are good things. And they're all a lot.

She suggested I talk to my doctor about the anxiety, which is something I've been circling for two years. I made an appointment. I sat in the doctor's office and described what I was feeling and she said the words I'd been half-expecting: we could try a low dose of something and see if it helped. I said okay. I picked up the prescription on the way home and held the bottle for a while before opening it.

I made a big pot of chicken soup that evening. The original one — the recipe from the first video, the one that started everything. Some things you return to when you need to remember where the center is. The center holds. The center is always there.

The chicken soup I made that night was its own thing — old and specific and tied to a particular memory — but what I keep coming back to in the weeks since is the gesture itself: the big pot, the steam, the smell of something warm filling the kitchen while I tried to settle into a new and uncertain chapter. This Cheesy Chicken ’N Shells is the everyday version of that impulse. It’s what I make when I need comfort that doesn’t require me to think too hard, when the center needs holding and dinner still has to happen. It’s not ceremonial — it’s Tuesday. And that’s exactly why it works.

Cheesy Chicken N Shells

Ingredients

  • 2 cups uncooked medium shell pasta
  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of chicken soup, undiluted
  • 1 cup low-sodium chicken broth
  • 1/2 cup sour cream
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Cook the pasta. Bring a large pot of salted water to a boil. Cook shell pasta according to package directions until al dente. Drain and set aside, reserving 1/4 cup of the pasta water.
  2. Brown the chicken. While pasta cooks, heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add chicken cubes in a single layer and season with salt, pepper, and garlic powder. Cook 5—6 minutes, stirring occasionally, until golden and cooked through. Transfer to a plate.
  3. Soften the aromatics. Reduce heat to medium. Add diced onion to the same pan and cook 3—4 minutes until softened. Add minced garlic and cook 30 seconds more until fragrant.
  4. Build the sauce. Stir in the condensed cream of chicken soup, chicken broth, sour cream, onion powder, and black pepper. Whisk until smooth and bring to a gentle simmer, about 3 minutes.
  5. Add the cheese. Reduce heat to low. Stir in 1 cup of the shredded cheddar until melted and the sauce is creamy. If the sauce seems too thick, add reserved pasta water a tablespoon at a time.
  6. Combine and finish. Return the cooked chicken and drained pasta to the pan. Fold everything together gently until well coated. Taste and adjust salt as needed. Top with remaining 1/2 cup cheddar and cover the pan for 2 minutes to let it melt.
  7. Serve. Spoon into bowls and garnish with fresh parsley if desired. Serve immediately while warm.
