- 2 1/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 1 cup whole milk
- 2 cups heavy whipping cream, cold
- 8 oz mascarpone cheese, softened
- 1 cup powdered sugar, sifted
- 1 teaspoon almond extract
- 2 cups fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
Instructions
- Prepare the pans. Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper.
- Mix the dry ingredients. Whisk together the flour, baking powder, and salt in a medium bowl; set aside.
- Cream butter and sugar. In a large bowl, beat the softened butter and granulated sugar on medium-high speed for 3—4 minutes until light and very fluffy. Scrape down the sides as needed.
- Add eggs and vanilla. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Combine wet and dry. Reduce speed to low and add the flour mixture in three additions, alternating with the milk, beginning and ending with flour. Mix just until combined — do not overwork the batter.
- Bake the layers. Divide the batter evenly between the prepared pans. Bake for 28—32 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
- Make the Chantilly cream. Beat the cold heavy cream, mascarpone, powdered sugar, and almond extract together on medium speed, increasing to high, until the frosting holds firm, glossy peaks. Refrigerate until ready to assemble.
- Assemble the cake. Place one cake layer on your serving plate. Spread a generous layer of Chantilly cream over the top, then scatter half the berries across the cream. Set the second layer on top and press gently.
- Frost and finish. Spread the remaining Chantilly cream over the top and sides of the cake. Arrange the remaining berries decoratively over the top. Refrigerate for at least 1 hour before slicing so the layers settle.
- Serve. Slice with a sharp knife wiped clean between cuts. Serve cold or at cool room temperature.
